I thought it would be a nice thing to have a few changes made to the furnaces. I know realism is not liked when it comes to Minecraft, but I wanted to add my 2 cents.
Suggestions:
Different crafting recipe - The crafting recipe could include clay. It would be the same recipe, but with a block/item of clay in the middle. It's really weird how you can just throw a few rocks together and have a furnace that lasts till the end of the game. It would also add another use for clay which currently lacks uses.
Different igniting mechanic - How the heck does one start a fire with no tools? Do you rub the coal together? Do you just magically set fire to it? Well, I thought it would be nice to have another fire-starter aside from flint & steel. Flint and flint, maybe? It would last 1/3 of Flint & Steel, but would be more accessible when starting a new world or being caught in the depths with nothing to start fire with. The new crafting recipe would also make it harder to acquire iron tools when mining/exploring underground, thus making the tools found in chests more useful. This would also require an additional slot in the furnace (below fuel), and would take away 1 use from the fire starter to ignite fuel in the furnace (with the exception of lava buckets). It would make the player more careful when cooking something, to have the maximal use out of the lighter, since more fuel would have to be added before the flame goes out, so the flint doesn't need to be used again.
More advanced furnace later in the game - As I stated previously, it's a bit boring to have the same furnace you start with, all the way till the end. Maybe add a camp fire (there was a mod that did that a while ago). It would be a temporary way of cooking food when away from your house or when just starting the world, plus it would add a nice touch to exploration expeditions.
Different cooking times - This might be a bit too realistic for Minecraft, but as far as I know, it takes a BIT longer to smelt a bloody chunk of iron ore than cook a chicken.
A little spark to top it off - Countless times I've seen let's-players put gunpowder in the furnace wondering what would happen. Well, why don't we give what's coming to them? It would be quite funny seeing a new player blowing something up after wondering what happens when you cook gunpowder! It doesn't necessarily have to be a huge explosion like TNT, but it could be a little poof that does slight damage to the player standing near the oven and would make a LOT of smoke.
That's the list of what I think could be added to the game. Of course this might not fit everyone's fancy, so please, post what you think below. Forgive me if I have made any mistakes, since this is my first real post.

Most of these will be the same as Woodruff's list but:
Furnaces are one of the first blocks you need to start advancing. No need for it to have a complex recipe.
Complicated does not always equal fun. As I said in my response for 1, It is one of the first blocks players will make and there is no reason for it to be complex or complicated.
I don't really oppose this, as it would be nice aesthetically. But how is this a more complex furnace? It does less than the current one does. I did see a suggestion that was talking about a Brick Furnace that would have 2 input and output slots. That way once one slot is done cooking it automatically cooks the other, and it doesn't waste that half a stick worth of fuel that you normally waste when trying to cook a few of one item and a few of another.
Also seems unnecessarily complicated. Gameplay over Realism, every time.
This has absolutely no use.

About the second one: As I listed later in the post, there could be another fire-starter. For example "Flint & Flint". It would be easier to make, but with less durability.

I think your idea of too much realism must work in reverse, where the less annoyance the feature causes a player the more it's too realistic.
This whole post was made to show my idea of another igniting mechanic, so I didn't know if it would/wouldn't be too realistic, thus I just didn't say anything about realism. The other (the one where I mentioned realism) was an idea of which I came up with while writing this post and just threw it in there not knowing if it would be too much of a hassle to implement, and that's why I mentioned the realism thing.
But yeah, I guess you are right, even though everything that requires work in real life causes slight annoyance in some way.

There is a slight problem with that. For a bow you need 3 string, which is about 2 spiders, which means you'd need to wait until night to make a fire. Maybe you could start a fire with 2 sticks, but they'd only have 1 or 2 uses?
