Here's my ideas for MOBs, for the Nether and Overworld.
OVERWORLD
Pigmen: These guys would always spawn with at least a WOODEN SWORD, but sometimes stone, iron, gold, or diamond, and also appear with axes and armour. They attack like zombies, but they will block attacks with their swords, and they will run away when they are low on HP. They drop XP and rarely drop what they are carrying. They will only spawn on grass.
Wolves: What I am suggesting is that wolves become more common in tundras and appear in other biomes as well, but at night they will become angry and attack you if untamed. At day, they will stop being angry. They should drop XP and 0 to 1 pelt(s) upon death, and 1 pelt can be crafted with 1 pair of shears to make 4 leather. (Shears will be used up and must not be damaged.)
Ghosts: These enemies are as tough as zombies, but are neutral and just wander around in the dark. Ghosts can only be damaged with golden swords, golden axes, enchanted swords and bows. They drop ectoplasm, which would be used to brew potions from then on (you would require ectoplasm as well as netherwart.) This would not be too bad, because gold is easy to get. They disappear instantly in light.
Snakes: They only spawn on grass and sand, and are 2 blocks large. They will appear to be slow, but when you come close they will dive for you and poison you, then start slithering away and around you until they can strike again. The trick is killing them while they are in mid air or shooting them with arrows. They drop XP and sometimes drop Venom glands.
The point of venom glands is that if you combine one with an arrow, it will become a Poison Arrow. Poison arrows are green and will do poison damage for 5 seconds.
Red dragons: They should spawn in dragon lairs, which would have their own biome and look like huge mountains with gates. Red dragons are neutral and will spit explosive fireballs if you attack them. Their lairs have obsidian walls, ceilings and floors, and the door would be made out of iron and be activated with a lever. Red dragons will drop lots of XP as well as a few dragon scales for defense potions. They will not attempt to chase after you if you leave the lair, but if they are spawned outside of a lair area they will wander about like the ender dragon and hunt you as well as other players down.
Giants: They would have their own biome, called a wasteland. It would have nothing but perfectly flat stone. Giants are faster than you and can break through blocks to get to you if you have aggro'd one, and they are immune to arrows so that you cannot aggro them from far away. You also cannot just place TNT by them or lava, because they will attack if you come close to them (10 blocks). Giants will drop lots of XP as well as eyes of Ender, and be blue cyclopses.
NETHER
Gluttons: Walking mouths that attack in hordes and are aggressive but weak and easy to kill. They drop XP and sometimes glowstone powder.
Nether worms: They look like giant sand worms with teeth, and are 1 full block tall and 3 full blocks long. They will attack like zombies and slither up things rather than attack you, but they will also sometimes spit a line of string. If you are hit by this line of string, you will be paralyzed for 2 seconds, so the best thing to use while fighting one is a bow. They will drop string and XP.

You mean I can expend two iron to make four leather? That doesn't sound like a terrible trade at all! I mean, you can make ARMOR out of that leather! And even better, that armor isn't as good as what you'd make with stupid old iron! Wait a second...

Wow, people really want Pigmen to make it into the game. I can't see how they'd fit in on the Overworld when we already have villagers. Dragons shouldn't touch the Overworld, at least not the red one. It's not a personal dig at the suggestion, I just think the starting Overworld shouldn't contain these monstrous dragons that could potentially become a Ghast for the Overworld. The ghosts and snakes are alright, if implemented right. I think the Eye of Ender should stick with Ender Pearls and nothing else.

I'd recommend any other potion effect, so the mob is still dangerous but doesn't cause as much rage as it would if you got paralyzed and strip away your right to move.

I think of the villagers as calm peaceful traders, and the pigmen as barbarians who slaughter and pillage.
And the Nether worm wouldn't be too bad if it was only paralysis for 1 second rather than 2. If you can think of a good name, please tell me.
Also updated the post: Dragons won't leave their lairs. They will fly around them and fight you as long as you are inside of them, but they will not leave if you escape and run away. They'd fight like ender dragons if spawned with eggs or commands though.

Leather is used for things other than armour as well. It is used for books, which are VERY important, and it is also used for item frames.

Yes, but you only need so many books before you get max enchants, and item frames only cost one leather each. The only reason trading iron for leather would be practical is if you were constantly replacing the leather for armor, in which case the iron you started with is a better choice.

For some reason, I just don't see the Giant fitting in vanilla MC :/ I do like how it's another way to obtain eyes of ender though!
