Not to be taken exactly seriously but a funny idea I had being that in some way you build a small tower and atop it have a way to place the Eye of Ender inside a pumpkin or something. Similar to the "Eye of Sauron" it'd sit higher than most looking around for mobs. Any snow/iron golems would then have an increased mob detection area. Would be useful for larger villages or when players expand on current ones. Mobs may attack one side while the golems are opposite and therefore render the villagers as though fish in a barrel.
This could work well with something I was thinking of: villages with different levels of technological advancement.
Tier one and two are your basic smallish villages, no smithy, only one or two farms, no Iron Golems. Nothing special.
Tier three has a single Iron Golem and a smithy... your basic NPC town.
Tier four would have an Iron Golem, two of all possible buildings, and a wall made from either wood or stone bricks. There would be an open way in with nothing guarding it besides the Golem though, and zombies can still siege the village effectively if they're lucky.
Tier Five is the same as Tier Four but with a pair of doors in front of the entrance. There is also a second Iron Golem posted outside the entrance, and he doesn't move much unless there's zombies coming. This is where it starts becoming a really good type of village to find, because it is often very well defended, and the NPCs might have better deals even.
Tier Six is Tier Five but with Snow Golems in turret towers on intervals in the wall and no Iron Golem guard. Hard for zombies to get.
Tier Seven is awesome. It's Tier Six, but with TWO Iron Golems stationed at the gate instead of none, a Watchful Eye in effect over all of the village, and perhaps some more fancy magitech. If you get lucky enough to somehow find one of these advanced cities, taking it over would be a good idea... just let the villagers do their thing though. Only problem is, the Villagers' trades will stink, and you most likely won't even find this village level unless you're REALLY lucky. This type of village may also include Blueprints that allow you to craft things you normally wouldn't be able to make.
Yeah, you get my point. A rare, superadvanced city of Testificates would have this... You'd probably only be able to get it once you found the blueprint.

Wait! In tier seven, you can find a type of villager, a builder, he has a hardhat, overalls, and holds a pickaxe, and for about 10 emeralds and 5 diamonds, can give you a building blueprint, which has no durability, last forever, and will let you place a specified village structure the direction your facing! Now THAT would be pure awesomeness.

no, I wasn't being sarcastic, I really think it's a good idea, having more evolved (metaphorically) village and villagers, they seem a bit bland as is.
To everyone who is adding unto the idea: Minecraft is VERY young as a game itself. give it some years and we will surely have cities and flying cars within 5 years.

Not sure where the whole technology thing came from or advanced villages of any sort.
Plain and simple the "Watchful eye" or whatever you want to call it would simply extend the golem's area of detection. Almost like giving the AI a sixth sense when it came to villagers in danger or mobs in the area. I always pictured a funny kind of scenario in which a griefer/troll finds a player created village with villagers in it. Decides to be an ass and kill them. He hits one and next thing you know 3-4 iron golems are converging on his position from out of no where

*Looks at 'converging on his position'.*
Captain: Let's do this quickly, and cleanly.
Private and Seargent: Roger that.
*Captain kills villager*
Captain: ****, IRON GOLEMS CONVERGING ON OUR POSITION!!!
On-topic: This would be awesome for people like me who like to 'upgrade' villages because the iron golems have a relativly small sight.
I hate people who complain. I hate spiders. I hate people who own an Xbox One. I hate people who like sandbox games. I hate people who like first person shooters. I hate people who like explosions. I hate people who like video games. I hate people who are hateful. I hate people that don't like spam. I hate people who like cake. I hate people who type in proper grammar and spell words properly on the internet. I hate hypocrites.
Just thought, they could maybe even just retexture one of "The End" portal blocks. Make it look a little different.
Or even the crystal things when fighting the end dragon that restores its health since that rotates and such.
Both would make for an interesting eye insert, lol.

Enderman: What. Why the heck is that thing bobbing up and down like an ender crystal.
Spider: Dunno, some sort of defense thing.
Skeleton: AH CRAP, IRON GOLEMS!

Been seeing some rather large villages on the server I play on. Often enough though mobs have spawned inside and killed some villagers. All I could think while I saw them being killed in the distance while I attempted to save the others was that this tower to alert the iron golems on the other side of the village would've came in handy just now, lol

A] Taking this too seriously
B] Making it more advanced than it needs to be.
My idea for this is a spoof off of "The Eye of Sauron" All it would do is increase a Golems area of detection greatly to help protect villagers
