I hate joining a multiplayer server and visiting a local village, and see it all beat up and destroyed by players desperate for wood or stone.
I think there should be an incentive not to destroy villages, so I came up with some disadvantages for harvesting vilalges.
The first consequence is that iron golems, if any are around, will come after you upon a breaking blocks. Pretty simple.
A way to break them for your tail is either running far enough away so that the golems no longer chase you, or just placing the blocks you broke back into their proper place, in the way they were before. Misplace a block, and they won't stop chasing you.
The second consequence is villagers will give you some ******** deals. Such deals as 5 emeralds for 2 wool, 9 diamonds for 3 emeralds, etc. Villagers don't like their houses being broken by humans, so in turn they will demand money, lots of it. With enough money in their pockets, they can afford to fix the damage you caused (filling in holes with blocks and stuff.) These replacement blocks can be harvested again by you, but it only gets you so far. Golems will be after you, and you can forget about trading from then on.
One last consequence, which I'm not so sure about, is destroying buildings will make parents of little villager children tell them to steal from you. The children are fast, so it would be hard to get your stuff back, and to add on to the difficulty, you also have to kill the children to get your stuff back (I know, it's dark), which should send a few iron golems on your tail, and also raise prices.
I like it, except for the children mugging you part. But what if you built something in the village (possibly something that clearly isn't a house) after griefing a villager house, an iron golem will walk up to your creation and destroy it. Of course, small villages would still be at the mercy of players (except for denying trading or giving bad deals), so every village should have at least one iron golem.

The only problem with this is that they can not possibly tell if your makeing their homes better or destroying them. You could be improving a house when all of a suddan, golems attack you.
