In Creative Mode right clicking on a villager should open up an enhanced GUI with more than just the normal trading options.
You should also have the ability to modify what trades the villager offers (setting any price and letting them buy or sell any desired item for any other item), toggle whether those trades expire or not, change the color of the villager's clothing, and toggle villager invulnerability. This would allow villagers to server as custom shopkeepers on servers and adventure maps.
This is a very good idea. It would also be nice if you could give them an inventory slot so they could sell a unique item like a book or a map, which could be a vital story element.

Maybe we can also add a new layer of depth into villagers too.
You can also set villager waypoints. At certain times in the day that you choose the villager would begin to navigate to that waypoint. At the waypoints villagers can be told to do certain things. They could stand there to act like shopkeepers. They could mill about randomly or between multiple set points in that vicinity to simulate them doing work (like a blacksmith going between an anvil and furnaces) or have them just head to that point and resume normal villager AI stuff.
The uses for this are making it so villagers have their own homes which only they use. It could also make villagers own their own shop. It would make it seem like they actually do stuff. To make it seem more realistic, you can also set a villager to hold an item too at that waypoint. Like a hoe at a farm.
