I think in this case the extra steps would add too much complexity, but kinda dumb down the more "epic" mounts. I like hitting them with a saddle (as hitting objects with things is the basic strategy for everything) But not just once, enough times to "kill" it. Have it do a small amount of damage per hit, say 1 heart. If you're careful, you can hit it once or twice with a sword without killing it, and finish it off with the saddle to make a mount. If it's something with say 20-30 hearts, that breathes fire, using this method would be really dangerous, and worth the effort.Domesticating livestock is once thing, though really if they're persistent, just walling them in should be enough. Same thing for walling in bigger more dangerous creatures that you might have bred. Then one day, you have to go fight it till it submits. Easy for smaller mobs, truly awesome to achieve on large dangerous mobs, and really tricky with any flying mob, because the AI should run away if it gets near dieing. No "saddle arrows". Though in that case having a sedative could work. I'd make those a pretty high level item though, and expensive at that.
Different saddles is a good idea though, adding armor, storage, and so on. Binding a few extra buttons would be fine, but I wouldn't focus on their having special abilities. Just have them give you health, and fly in some cases, maybe have their own attack, but that's probably it.
I think you should also have to remember to feed your mounts too. and pig mounts are fine, I'd make any "animal" mount tamable like this. If it's super dangerous, it's worth it, if it's silly and easy, well, it's certainly not broken or anything.
That's... Actually a fairly solid mechanism. It's a little strange to try hitting something with a saddle... But we can currently hit things with flowers, so i don't see why not.

What? It's a weird idea! Look at how whales swim. They roll through the water, sometimes just because they feel like rolling. They dive insanely deep, and only occasionally come up for a gasp of air. There's nothing on their bodies allowing you to attach anything to them. If you did have, like, a cabin or something on their back, it'd periodically flood, go deep below the ocean, and finally come back up, hours later. Not to mention whales are social animals, live in groups fairly often, and have no problem with being very close to one another. So close there wouldn't be any room for anything to be attached to them. You wouldn't be able to stay on the thing, if you left to go chop wood, it'd just swim away into the depths and you'd never find it again.

Ooh, I like that model. Anyways, there was a mention of a digging mount, and I thought the idea of having a massive lizard that digs (those do exist, I just can't remember what it's called) faster than an iron pickaxe in dirt, but extremely slow in rock or ore. Oh, and lizard mounts found in the desert would be awesome, they speed across flat terrain and move slowly up terrain.
Also, what about the height? If you're on something smaller, that's a tile tall normally, you should be three tiles tall. If its a humongous creature, say 12 tiles large, it's size with you on it would be 14. That way, you could make person only entrances. Oh, also...mounted combat! It would make warfare soooo epic, desert scorpion and giant eagle cavalry sounds like win to me.
