I guess it would be ok if 1x1 holes that are not covered are filled up, but any bigger is no.

Yes, definitely. But it would take far too heavy a toll on most peoples' CPUs, so it's probably never going to happen except through mods (such as Finite Liquid). I still support puddles forming on the ground when it rains, though. Played a mod that did that once and it added so much immersion to the game that it was amazing.
I'd love real water physics (I've played Dwarf Fortress enough to know how incredibly fun it can be, but when I downloaded Finite Liquid my game just gruond to an almost complete halt. I prefer to be able to actually play .
