Hello, I woke up with the idea of making Minecraft harder. If you think about it, the only challenge is monsters. There's really nothing else in the game making it harder.
- Poison Ivy
Poison Ivy would spawn in Jungle biomes. It would look like a vine, but it would be much more light greener. On Peaceful, poison ivy wouldn't be in the game, or wouldn't do anything. On Easy mode, if you try to mine the poison ivy, it would poison you, and you'd lose 5 hearts. To walk through it, you would need a full set of leather armor+ on. On Normal & Hard mode, poison ivy would poison you until you lose 7.5 hearts. You would need a full set of iron+ armor on to walk through it. To mine the poison ivy you'd need wool gloves that can be obviously crafted by wool. The recipe would be:

The same chance of finding an apple in a tree, would be for finding poison ivy on a vine. Collecting 1 poison ivy from a vine gives you 5 poison ivy. After collecting enough ivy, you could make a wall around your house, place the ivy on the wall and make a mob trap.
- Insects
When you destroy a dirt block, there will be a very rare chance that you'll get insects under it. On peaceful mode they wouldn't attack you unless you attack them. They also wouldn't hit as fast. If you attack them in peaceful mode, they will damage you 1/2 a heart each 2 seconds. They have 2 hearts so they are easy to kill. In Easy mode the insects would do 1/2 a heart each 1.5 seconds. The insects would have 4 hearts. On Normal & Hard, the insects would damage you 1/2 a heart each second, and they would have 7 hearts. Once killed the insects, you could use / left click with glass in your hand on them and you would preserve them. You could then make an amulet, that would make spiders not attack you during the night. The recipe to make the amulet would be like this:
- Skunks
Skunks would blur your vision until jumped into water. To make a skunk spray you, you'd have to attack it. If you don't attack it, it won't do anything to you.
- Thieves
Thieves would run around pickpocketing you, or stealing from your chests. If you got pickpocketed a message would come up saying "A Thief has stolen 5x diamonds from your inventory." If you leave your door/s open, a thief might come and steal from your chest. If you closed your doors, you are safe from them stealing from your chest. If they did steal from your chest, a message saying "A Thief has stolen 5x diamonds from your chest." Thieves automatically sprint when they have stolen something so it will be decently difficult to find them if they stole from your chest. They can sprint at the same speed as you, and they can hide behind a few blocks. Thieves would hit with the power of a stone sword.

Play hardcore. Do Tree spirit challenge. Use a mod.

In hardcore, all that changes is how monster hit on you. Which is the boring version of hard..
Mods.. I don't like mods because there's non that I REALLY like. There are a few, but outdated.
While I do want the game to be harder without inducing the difficulty yourself, this isn't the right way to go about it.
Poison ivy is pretty OP for something that would give me a nasty rash IRL. Come on; touching poison ivy twice in reality doesn't make you drop over dead, so why should it in Minecraft?
Insects... meh. They'd only really annoy me since
Skunks are pointless. If I ignored them they wouldn't change my experience, whereas if I ignored creepers the landscape would be dotted with holes and I would die frequently.
Thieves, as Death said, aren't difficult; just annoying. If my accidentally left my door open, i'd come back to find my diamonds are gone. That's just agitating and adds the wrong kind of difficulty.
If you want to make the game harder, nerf armor.

There's a thin line between adding challenge to the game, and adding things to the game that would just annoy the **** out of players. These dirt block insects and skunks are just annoyances.

Dude, really? I think it's safe to say that even you would get pissed off by something like this. I'm betting multiple lives that if something like this was added, every Mojang employee would be beaten to death by any gamer near them. Not only are these little annoying thieves taking my diamonds I spent so much time to get, they sprint away like little kids playing tag hoping to not be "it".
Oh wait, the thieves can sprint just as fast as I can? Cool! I'd love the chance to not be able to catch them and lose my 5 diamonds forever, just because Mojang slipped into maximum "durrrrr"-mode and added such an annoying mob!

Here's some very helpful advice. Eat breakfast first, so you have the energy and more clearer thinking, then make a suggestion.

Would they even feel like Minecraft?
Ivy just sound sirritating, not harder.
If you're really that bored, go play on SMP where other players can loot your crap. Use that as a challenge.

Try playing where you can't wear armor
Try playing with only wood swords.
Try playing where you can't make shelters
It make the game more difficult, and more entertaining.
