Because bland, cubic chambers and identical Jungle Temples are boring. Basically, generated structures like Dungeons and Pyramids would have more variables to them, rather than a single type of structure repeated across the world. I think changing this would add more challenge in some instances, and more excitement to finding these structures. Dungeons:
Rather than just being single rooms of mossy cobblestone, dungeons would have greater variability in how they generate, and be slightly larger. As well as the main room with the spawner in the middle, there would be 2-4 connected rooms from the walls of the central one. These rooms would be smaller and contain Zombie or Silverfish spawners. The chests would also be located in these rooms. Jungle Temples:
As far as I'm aware, all jungle temples are currently the same in terms of puzzles and traps, and players that have raided one can then go on and raid them all. This could be changed by relocating the Tripwires and Dispensers so that people actually have to keep their eyes open rather than memorizing the positions, and changing the lever/piston puzzle by having different temples generate with different lever combinations needed. Temples could also generate wider or taller, and larger ones could be more difficult to raid, for example, having a five-lever piston puzzle. Pyramids:
Not much to say here. I do, however, think Pyramids could have more than one pressure plate at the bottom of the treasure chamber, as this would make players more wary of tripping and blowing up the chamber. Strongholds:
I understand Strongholds are already randomized, but the structure of them is essentially the same rooms and corridors copied and connected. Strongholds could be made more exciting with larger chambers and a greater variety of rooms- for example, chambers that represent types of houses found in villages, like blacksmiths, rooms with tables and chairs, and underground farms. There could also be different types of portal rooms to generate, like having the portal sunken into the floor or suspended on a pillar.

I actually put a decent amount of thought into this thread...
