I believe that gold should be changed into a currency ore because gold is more suited to the currency theme. Gold is usually recognised as a currency item in life, therefore it should be used in minecraft. i believe also that emerald should be used for crafting, for eg: tools and armour. Emerald should not be more rare then diamond just the same efficiency as gold in other words they should just swap.
Emeralds are suposed to be only traded. Mining them is just a interesting way on how villagers have them and a nice find.
Exactly. Also, it's Mojang's game. Why wouldn't they add a new ore for trading? It would be a bit boring if they made gold for trading. Plus, then gold would have to be way rarer and nobody would like that.

I might also point out that gold is not recognized as currency anymore. If I try to had a cashier a gold coin, they would not take it. This is largely because gold fluctuates in price and therefore has no stable value. Because paper money is produced by the government, the government is free to control the money supply and maintain a relatively stable value for every unit of currency.
Minecraft works in this manner by making it rather difficult to find emeralds outside of trading with villagers. Many people can obtain whole chests of gold, but trying to obtain a similar quantity of emeralds is very difficult.
Also, since you suggest that they just switch places, why not swap the textures? Swap gold ingots and emeralds, gold ore and emerald ore. You could even change the language pack to swap the names. You'd be left with smelting emerald ore in a furnace, but that is as easily overlooked as getting a perfectly cut gemstone from a block of ore by whacking it with a pick.
