I like this better than the actual suggestion. xD
OP's suggestion does make a fine point, and it would be easy to add. Just give pumpkins one more bit of metadata to show if it is generated or not. Leaves use a similar method to prevent user-placed leaves from decaying.

Doing the work of altering pumpkin textures just for the sake of realism doesn't seem like it has a very worthwhile end result. I'm not saying your idea is bad though, as it makes a lot of sense.

They don't have to alter the pumpkin texture, just add a damage value to the pumpkin;
Pumpkin with damagevalue of 0 is carved
pumpkin with damagevalue of 1 is not carved

When you grow a pumpkin vine, a snow golem will come to it and die there.
They don't have to alter the pumpkin texture, just add a damage value to the pumpkin;
