For new mobs, there should be mimics that look like chests that spawn randomly instead of a normal chest, and giant mimics that look like spawned houses or dungeon rooms in caves.
The chest mimics would look identical to regular chests, and drop random loot that would be the same as normal chests found in that area, IE jungle ruins chest loot, desert ruin chest loot ect. The only difference is that mimics would be extremely tough, but give tremendous amounts of exp.
Giant mimics would look like normal houses or dungeons, but would spawn more frequently in thier respective biomes, and woud have indestructable insides, save for the tentacles appendages that drop down once it traps adventurers inside themselves. If the adventurers can kill the appendages as well as the central brain that hangs at the center, then the trap will be negated, and a mimic will no longer spawn in that trap, giving the adventurer an indestructable house, and an xp reward half that of a dragon.
Even larger, mansion sized mimics could be a thing, that could be like a dungeon raid. You would have to save up resources, then enter the mansion, become trapped, then have to fight smaller, room-sized mimics, and once all the smaller ones are dead, the antechamber becomes unlocked, and you have to fight a gigantic mimic as a boss. then get an entire treasure room, filled with chests (and maybe some mimic chests) and a mansion as a reward, not to mention the amount of xp from the mini bosses and main boss.
Now, I know this is a bit much, especially for mincecraft, if even only the chest mimics got put in, I think it would add much more to the game's mob list. As well as adding new life to the adventure aspect of minecraft, especially the larger ones.
Regular mimic sounds interesting, although I think they should only appear in dungeons and temples and the like. But the rest is just over complicated and in my opinion quite silly.

I agree they would make better end game mobs, and I also agree mansion sized mobs are silly, but Minecraft isnt exactly serious buisness.

No, but I have read some D&D Monster Manuals, and they have similar monsters.
