Well. Let me just say right off, that minecraft is a GREAT game. I love it, but as with any game, there are things that could be improved.
Some of these might just be personal things that I think would work better, and some might actually catch on.
1. More dimensions- Look up all dem dimensions. It would be a great mod too, if it isn't feasible to add it to vanilla minecraft. One of my favorite features of minecraft is the nether, and the idea of portals. I have messed around with the Aether, and some space mod before, and it made things even more fun
2. More tools- Think steel, Irl steel is made with iron and coal. Why not mix an iron ORE and a coal to make steel dust, which can be smelted into steel. It would be a great addition. Steel would be not only as powerful as iron, but as durable as diamond. You could adjust it so that 3 coal and 2 iron or whatever is needed per steel dust for game balance purposes obviously.
3. Renewable ores- I know you are taking a step towards this with the concept of emeralds as a trading currency with NPC villagers. But why not have a rare plant that can be planted on obsidian, and grow ores (iron, gold, redstone, coal, and diamond) at a rate of like half that of melons/pumpkins, and in the same manner of spawning on the adjacent block? Just an Idea, but I think this would be cool, if tweaked a bit.
4. Better textures- Diamond needs a clear texture. Diamond is not cyan. It is trans/parentlucent depending on the purity of it. The tools/armor/swords/diamonds should be too then.
5. Gold golem/Diamond golem- What use is there for gold really? I don't use it for tools or armor, I use iron and diamonds. So why not add another purpose for gold outside of watches etc. It would be loyal to you, rather than the NPC villagers. This would also add another purpose for Ore blocks rather than just compact storage and decoration.
6. Bars in NPC villages that serve potions. New villager type bartender (emerald trading idea)
7. Snow temples, Atlantis etc. You are going in the right direction with desert and forest temples! Take it further?
8. Plumbing. (pipes that carry water, pumps etc.) easier irrigation of crops etc.
9. More enemies- Ghosts? bosses? Werewolves (wolves that turn hostile automatically during nights, and have better stats, can still be tamed during the day? more rare than regular wolves? Differences in textures?),
10. More dragons? Like fire breathing ones, that are smaller and easier to kill than that big black behemoth.
11. Fruits? Eg strawberries, and bannanas.
12. Better NPC villages, some are large and have new building types, hotels etc. (cities basically)
13. Cars (sister's suggestion, not mine)- They run on coal, and don't need rails or redstone powering.
14. Better and more do textures. Dogs vary in size, color and shape more so than cats... So why is there just one friendly dog texture?
15. Pizza, tomatoes, and cheese.- Pizza can be placed the same way cake can. Craft it like this: 2 wheats and an egg on the bottom. 3 tomatoes in the middle. 3 cheese on top. Get a cheese by crafting 2 buckets of milk. The pizza can then have a red mushroom or porkchop added as a modifier, and then MUST BE BAKED. Its complicated, and pretty expensive to make, but can be shared, and placed, and gives more hunger points than a cake. Tomatoes grow in a similar manner to melons, and you get a few tomatoes when you break the product.
16. Toast- refills more health than bread. COok a bread to get it (duh?...)
17. Garlic, garlic toast and vampires- Garlic can be used to repel vampires when in the inventory, and to make garlic toast when crafted with a toast (above), Vampires are translucent and as fast as spiders. They do almost as much damage as the feared enderman. Therefore, having a garlic to repel them is a valuable addition. Vampires should only spawn in forests, jungles, and swamps (not nessecarily those, just some suggestions.)
18. More mobs like the mooshroom! I absolutely love the concept, and function of the mooshroom. It is perfect. I think mojang needs to use their amazing imaginations for more fascinating and original animals in vanilla minecraft.
19. More uses for clay.
20. A autodigger- Note, this is not some kid saying "I want something to make diamonds for mee!" I say it should be crafted with a diamond pickaxe surrounded by obsidian in the corners, and redstone on the sides. It has unlimited uses, and takes 2 seconds per block, digging from start to bedrock, and then returning to the surface, carrying all the items it dug. Lava and water do not affect it. It also takes 30 coal or charcoal per dig. I think there is a mod like this, but it's a good idea for vanilla.
21. Shields- Has nobody thought of this!?!? Seriously... It would be amazing. Just add another armor slot to the charachter. It increases defense. 3 of item on top, 2 in middle, along with 1 string, and 1 in the bottom center.\
22. Ropes- Others can brainstorm purposes. 3 strings together makes one or two ropes. These could be used for pulleys, rope ladders, whips, etc.
23. More weapons! You can go the whole hog and add flamethrowers, MP5's and Sniper rifles, or you could stick with the more medeivel (sp...) Whips, spears, maces. and battleaxes. The possibilities go on and on. There are some mods that add similar features.
24. More records
25. Monster repellant potion. (splash and regular) Add your own values for game stability.
Well. There you go. 25 suggestions. I put some thought and creativity into this list. Feel free to comment your own, but have them well thought out, and be ready to defend them against Mojang I am also open to criticism on mine. Feel free to add your support to see one/some/all of these added when Mojang gets a chance. I know 1.4 is already planned out, with the modding API, and so on, and there won't be many gameplay changes, but these could be some ideas for 1.5 or 2 See you round the mine!

I realize you may have put in lots of creativity, but still...
Also, most diamonds ARE not as pure as you would think, the ones that are clear are sold, the brownish, yellowish, dark ones are used industrial.
