These pictures are taken straight from the minecraft wiki.
This is a regular map. Each dot represents an 8x8 area, which is a majority of that area.
This is a map that has been hacked to make each dot represent one block, rather than an 8x8 area of blocks.
The difference? Since the zoomed in map displays each individual block, you can actually get a feel for what you're looking at and not just what biome you're in. I find this to be a lot more useful because the map actually represents something. The only trade off is that less area can be displayed.
So its up to a poll, should all maps be turned into these new zoomed in maps, or stay the same, or should there be a separate crafting recipe for zoomed in maps?
Well, maps in Minecraft are just meant to point towards the place you crafted it. But I really do like the block for pixel map... that would be so useful.

I use them for a lot more uses than a compass, and they should be worth more than a compass.

Very true.
Here is a possible way to keep both kinds of maps. Crafting just one normal map makes the pixel for block map. Crafting two maps together makes four blocks for one pixel on the map. Crafting four maps together (maximum) makes the normal eight blocks for one pixel map.
