The village trading system is off to a neat start, and there's already a great thread going on price rebalancing. However, there are some items that I'd love to see the villagers trade with me. I'm sure others have good ideas, too. Here's mine:
(1) Make villagers accept rotten meat in trade. A stack of 64 rotten meat for 3-4 cookies would make me happy. I feel bad throwing the zombie meat into lava, and I'd love some viable way to turn it into something useful. Admittedly there's little plausible reason for the villagers to want this, but maybe butchers could use it for stews or something.
(2) Make villagers accept wheat seeds in trade. A stack of wheat seeds for 1 emereld (or some bread?) would be magnificent. I have so many more wheat seeds than I know what to do with, and I'm sure the farmer NPCs need to reseed their fields occasionally.
(3) Make villagers trade lily pads to us. I love lilypads and I can never get enough of them. Maybe farmers could provide them (though I'd personally like to see them on Librarians, since those guys seem to have gotten a short and odd list of trade items - maybe Librarians can convert to Scientists or Researchers for a plausible explanation of their existing inventory).

Admittedly there's little plausible reason for the villagers to want this, but maybe butchers could use it for stews or something. Then don't throw zombie flesh in lava. It's more useful than you're making it out to be. Eat zombie flesh as an expendable food source rather than diving straight to your more useful foods first. Or feed them to tamed wolves, so you can give them a poisonous food source with no effect on them while keeping the better food for yourself.
(2) Make villagers accept wheat seeds in trade. A stack of wheat seeds for 1 emereld (or some bread?) would be magnificent. I have so many more wheat seeds than I know what to do with, and I'm sure the farmer NPCs need to reseed their fields occasionally. I kinda support this idea, but compared to most of the other trades, I'd recommend maybe having two boxes for wheat seed stacks, because seeds are insanely easy to find.
(3) Make villagers trade lily pads to us. I love lilypads and I can never get enough of them. Maybe farmers could provide them (though I'd personally like to see them on Librarians, since those guys seem to have gotten a short and odd list of trade items - maybe Librarians can convert to Scientists or Researchers for a plausible explanation of their existing inventory). You loving lilypads isn't a very strong reason to have Villagers trade them. I can't even see why Villagers would even care to have them. I don't see much purpose in the Villager-conversion part, and having Scientists or Researchersin Minecraft's stone-age like demeanor might feel out of place (despite us having Jukeboxes and Note Blocks).

I agree on the seeds. The rest doesn't make much sense to me. Although there was KIND of a rationale for the priests to buy rotten flesh, whether as a bounty for killing zombies or just to give them a proper burial.

Better idea for revamping Librarians. Make them sell pre-witten books. It wouldn't be hard to sell tutorials or lore about the villagers in the form of tongue in cheek journals or research papers. It should even be possible to make the author be whatever the devs wanted, maybe even randomly generated author names.
For example, a book called modern alchemy that basically details the brewing system, called modern alchemy to reference the fact that we no longer use cauldrons.

As for my first post, I forgot to mention that I would want Villagers to make deals with Rotten Flesh again, as it gave more incentive to collect them, but still, trading them for cookies makes no sense at all.
Definitely seeds, I am always just throwing them away. I would also like to sell flesh, but for emeralds. Also, the ibrarians should do what

Interesting block. An artisan. They could sell dyes, bowls (pottery), paintings, and other goodies that fit in.
Rotten flesh can be quite useful. Wolves aren't affected by the hunger caused from it. Also, if you have buckets of milk, then rotten flesh is fine to eat because the milk will cancel all potion effects. There is no need to throw it out.
I have to agree with the lily pads though. They are so useful and even look great as decoration. Either make them obtainable from villager trades, or add a way so that they are a renewable resource.
How about this for useful rotten flesh (considering I, and many others, don't waste bones on suicidal useless wolves.): Iron golems will give you one emerald for an amount of rotten flesh. Not that they need it, but it's basically like a "Thank you for killing off zombies to protect us, I will give you this emerald" kind of thing.
