The single most amazing thing you could add to starter chests would be saplings.
In fact, one sapling should be mandatory in any starter chest if you decide to implement this suggestion. Preferably, not a jungle tree sapling (because of the lower jungle tree sapling drop rate). A few blocks of dirt would be icing, but not strictly necessary since dirt is usually not too hard to find witha bit of digging.
This would solve a ton of problems with map seeds that drop you in awkward places without needing big tweeks to the terrain generator. Middle of the ocean? Grow a tree, make a boat and sail away. Middle of the desert in a large-biome world? Grow a tree so you can at least make basic tools and dig your way to prosperity, instead of walking for in-game days to find your first tree. It would make starter areas devoid of trees much more viable as playable worlds.
Alternative suggestion: Make apples craftable into oak tree saplings, much like a pumpkin is craftable into pumpkin seeds. Then you have a non-zero chance of getting the material to grow your own trees in a starter chest.
I could see this working. I get so frustrated when I get plopped down in the middle of a plains or desert biome in a large biomes world. This would be very useful. I support
Support.
It would be easier for newbies to survive if they spawn on a survival island seed with no trees- you could just INVedit yourself a sapling, of course, but that might be too much bother and hassle if they have not downloaded it yet. Should one bonemeal also always be included? I never use bonus chests so I don't know what's usually in them... I'll go check it out on the wiki.
Support this 100%. Love survival island seeds, but so few of them have wood.

I am ninja'd far too often.
Ever spawned in the middle of a desert in large biomes? You don't see a single tree for days

If I were you, I'd do exactly the same thing as you would, because I'd be you. Duh.
