Health: 10 punches. One diamond sword swing.
Attack: Half Heart
AttackSpeed: Quick
Moving speed: Slow.
Movement Type: Hover.
Shadow Ethers only spawn in the darkest of caves. If you venture into a cave with only a Torch in hand, and not a more permanent light source, the Shadow Ethers will watch you from the darkness. You can tell when a shadow ether is near because all you see is their eyes. They make whispering sounds as they watch as well. They hate light, and if there is even the slightest bit of it, they avoid it. They die in Night-time-level light. Their eyes are scary, watching, intense and unnerving. When the lights go out, or your torch burns down to the stub, they attack, swarming around you. Unless you pull out another torch or escape to a light area, they will keep coming. Their spawning is activated through players being in these darkest of areas. The best protection against Ethers is light. Even the slightest bit of light above pure darkness is enough to keep them from coming at you. Plus those eyes are sure to make you panic as your torch gets smaller and smaller. They are not ghosts, but the manifestation of Darkness.
Think of Shadow Ethers as a necessity for light.
Also, We need a biome where it's mostly helpful or non-aggressive mobs, aside from the nightly assault of skeletons, creepers, and such.

I like the shadows idea.
As for a safer biome, I think grasslands are fairly safe. Nights there don't spawn any mobs. Eagles are easy to kill, and armour balls are rare enough that you can battle one safely, and feel confident taht you won't run into another before healed.

They would explode next to you, then the fungus would get into your lungs, and little baby creepers would grow. After that, you'd die of asphyxiation, your body providing ample nutrition for the growing fungile abominations in your lungs. Soon, however, a symbiotic DNA retrovirus would come out of the fungus, and reanimate the dead. The reason, then, why there are so few people in Minecraft (compared to Earth, obviously) is because the rest of the people were killed off by these horrific creatures, and their bodies have become husks for the retrovirus.

cubids aren't all that aggressive, its only when you get in their way, like the Giant grub, also, you can deflect them in a different direction, so you can use them offensively. I picked spheres because aint that from another dimension, or am i wrong?

Lava Dons are one of the only friendly creatures you'll find in or around lava. They eat the iron in the magma to survive, but when silly adventures decide to see if they can do the same, the lava dons take action...in a passive manner. Adventurers taste bad, you know.
These monsters have a chance to spawn when any lava larger than 2x2x1 forms (meaning they have a chance of being found in freshly dug lava) They will sit along the edge until a player walks on to the back of a Lava Don. He/She will then assume control of the Lava Don until backspace is pressed (these guys could also be used to test vehicles and the like.) allowing the player control of themselves again until they touch the Lava Don once more.
Lava Dons need extreme heat to survive and, as such, will not leave the lava.
Giant Anteaters
They would attack ants and spiders they encounter, occasionally bulling players out of the way to get at them. They come out at night, then go sleep amongst the trees during the day.
Imp
Spawning in dark caves in lava pools, they will hide from players and steal ores as they mine. Also capable of throwing small balls of fire for small amounts of damage.
Gremlin
Small creature that loves causing mischief. They're not very strong at all, so prefer to avoid players at all costs. They will randomly destroy blocks of almost any type permanently, and will often go for higher valued items. They are rarely seen as they spend most of their time invisible and only appear when they're about to destroy something. They can be captured if lured with something of especially high value to break.
Suggestions on materials to contain one? I'm thinking something as simple as glass, as it would hint at some sort of counter-intuitive magic at work behind the creature.
Capturing implies you can train them. Perhaps in combination with chain or rope leads, you could drag them around as pets of a sort, them kicking and screaming all the way.
Sandworms are the toughest? I WILL TAKE HIM WITH BE BARE HANDS AND EVERYONE WILL CALL ME KING OF DE WORMS!!!

or for simplicities sake, they could noclip through sand, dirt, and gravel.
