If you right click your wolf with a bone it will kill any hostile neutral or passive mob that enters the sixteen block radius around where you fed your wolf a bone.
The wolf would not follow you or sit around. It would wander in that are a without any pattern.
Any idling wolves of yours would assist the wolf you commanded to guard, but only when it is fighting a hostile monster.

Seems good. A question, in multiplayer would they attack other players?

I'm not sure. Automatically attacking other players could cause problems with teams/guilds/factions. I think that wolves attacking players who attack their owner is enough.

Wolves shouldn't automatically attack players because like you said before it would cause problems between teams and also it would be overpowered. It would make camping way too easy because one could just take their wolf pack and hide near the spawn.
So you can command several of your wolves to guard different areas and only the ones you don't command will be considered "idle"?
Idle wolves only remain in sitting position or mindless walking around near the player until a guarding wolve's pathfinding locates a target. Any wolf not commanded to guard may still be commanded to guard but only in whatever area you right click it with a bone in.

Iron Golems are stronger but you can't heal them, and they require thirty six ingots of iron.
I am ninja'd far too often.
And they won't attack non hostile mobs I just realized.
Wolves would be better in this instance.
Still it never hurts to have an Iron Golem around.
