Just imagine the kick it would be to go sailing with a ship of your own design and construction!
For minecraft to detect what is supposed to constitute a ship, a set of rules should be defined making this possible to determine:
1: The ship must be built in the water, not touching any other surfaces then water.
2: It must be submerged at least 2 or 3 blocks to qualify as a floating vehicle.
3: A defined keel of the ship must be present, where the bow gradually submerges and the stern is next to straight.
4: Every ship must have a helm with a wheel (new item) for maneuvering the ship.
5: The status as ship must be initiated in a way to determine which structure is the ship, and what then would be more fitting then a splash potion?
This way the program can determine what is the bow, stern, starboard and portside of the ship, as well as having a fair estimation of how long and large the ship is, which could determine how it handles in the water.
Building on the mechanics that is already present for maneuvering a boat, this could be refined so sailing your ship feels more natural. If you for example are sailing a particularly long and large ship, this would make it tougher to turn much starboard or port while having much forward momentum. Also, backward momentum should back the ship up, rather than attempting to turn it around as the current boat mechanic does.
Landing the ship could be done by placing a block of wool on the edge of the ship or on the harbor, driving the ship up close till it connects. Sort of like a rubber dingy. Breaking the wool would then set the ship back afloat. Also, the ship could be landed by simply driving it ashore, but then having to break all the blocks connecting with the bow digging it free when it is time to go.
I think this would add an interesting new dimension to minecraft, which landscapes already contain huge oceans ideal for such projects. Some might feel compelled to expand rivers and make channels connecting oceans for easier shipping. Other may be more into building harbors around a large ocean sailing from port to port.
Of course such travel would impose a number of new challenges, as shallow waters and narrow passages. However, what a convenience ships would be for expeditions over the vast distances of ocean establishing shipping routs. Also, with ships in minecraft, building light houses would serves an actual game play purpose.

It's a good idea though, so wouldn't be surprised more people have thought of it.
Guess it was a bit of a waste of time for me to think this through and type up how it could work.
Please just mark it down as yet another vote for ships in Minecraft.
:-)
Yea, modular boats could be fun too, but I think it would be even nicer if one could design the whole thing and then launch it.
