It would be really nice to have more octaves to work with, and have have an interface where you can easily change notes. I do realize that this post is short, but I like to keep things short and simple.

Electric guitars were invented in 1931. That makes them fairly modern compared to things like sword, bows and arrows, and alchemy. Sorry.
How about a compromise? I would suggest making the note blocks function based on MIDI, allowing for simple emulation of all sorts of instruments and any sort of notes. The blocks would generally function as they do now, but with a simple data edit (via mod or plugin or what have you) very elaborate musical pieces could be assembled.
