When you're tilling the dirt, no matter how big it is, you are also running out of seeds to use for farming. Sometimes, when you're tilling the farmland that has been turned into grass or dirt again by sheep or mobs, there is a 5% chance that the certain seed you plant in the farmland will be dropped. When it is harvested by shovel, it will have a 3% chance of getting the certain seed you plant in the farmland.
Also, newly generated grass blocks or dirt blocks will also drop some seeds if harvested by a shovel or tilled with a hoe. Unless if you can't get seeds from the tall grass you can destroy.
The hard part is getting a farm going but then you keep getting seeds and seeds and you have a chest full of seeds. It would not other me if this was in game.
LIke everyone else said, seeds are only a problem when you're first starting your farm, and if you happen to find a village with wheat fields, you will never want for seeds. They tend to accumulate and become a bit of a nuisance, actually.
Instead, I suggest adding two very simple crafting recipes. 1 wheat -> 4 seed, and 4 seed -> 1 wheat. This way, you can use your first crop to generate enough seeds to expand your farm more quickly. Also, it allows you to turn the inevitable seed surplus into something useful.

Notch's Minicraft, however, has a serious shortage of seeds. You just can't seem to keep a farm going.
