I think it would be a great idea to be able to sprint jump over fences. Only fences, though, I don't think you should be able to sprint jump onto a block with a half slab on it.
This way, mobs couldn't get in/out because they can't sprint, but you can get in/out with great ease!
What about we have all kinds of parkour. to make it balanced you can't do this with armour on and you need to have empty hands.
You can only do these things while sprinting too. You even get a cool 3rd person animation. Good for machinimas!
Vaulting:
Vaulting is basically jumping over something using your arm to support you. I can't really describe this well.
You can only vault over 1 block high surfaces and fences. To do it you sprint at the object and right-click on the block you want to vault over. You must time it well. It fails unless you are within 1 block of the object.
Wall Jump:
Push off a wall with your feet to gain extra height.
You only gain half a block of altitude. Mainly used to reach a ladder higher up or to get the extra distance to cross a pit. There is a 1 second cool-down between wall jumps.
To do it you must sprint at a wall and jump as you're touching it.
Slide:
Slide across the ground to get under 1 block high openings.
You only slide 2 blocks and then you get up. If you can't you're stuck in a laying down position. You can't switch tools or weapons and you have to use your fists to break the blocks above you so you can stand. While sliding you move at normal walking speed.
To slide you must sprint and right click the ground.
This better consume massive amounts of stamina too, otherwise it would be completely broken.
To the OP, I don't think this is what Minecraft needs. We already have special fence gates to allow us to get through fences and the idea of a fence is you can't get by it without destroying it or using a gate. This suggestion violates that concept.
I think this is treating a symptom, not a cause; you are tired of animals getting out on you when you go into a fenced pen and you want an exclusive way to traverse fences. Well you can solve this much better by making a double gate (an air lock) where you have to close one gate behind you before opening the other in front of you.
Or you could support a suggestion that improves farming mechanics that can allow you to do stuff like throw wheat into a pen to attract the animals away from the entrance or physically push/pull mobs. If you want an automatic system, try the deer scare I suggested here.
Here is another option; make Iron bars behave like Cattle Guards. Used in real life by cowboys and ranch owners, it's designed to upset the livestock's footing when they step on it, so they tend not to go past it. If Iron bars don't look right, we could add it as an additional property to the drainage grates suggested here.
Conclusion: you shouldn't be allowed to vault fences, even if your doing parkor (unless your at a higher elevation). If the reason you want to vault fences is to prevent livestock from escaping, the above ideas are more feasible solutions that directly solve the problem without creating too many other issues.

Very well said!!
And also this would be severely abused in multiplayer.
