I'm sure it's been suggested before, but vaguely. If needed, I will draw pictures to make some of these ideas more clear. Excuse the lack of clarity in some parts, I don't like being too detailed. I'm also unsure of some parts, so feel free to add to my suggestion.
Golems will be these rare, large, powerful mobs encountered in hostile areas. They can also be very useful (and expensive) tools/weapons. Though homunculi are very complicated, they are also very customizable, which goes along with the spirit of Minecraft. MOB
Golem Properties
[*:1dzjn7rn]Size: very large, as in several meters tall
[*:1dzjn7rn]Speed: depends on the weight, but generally slow
[*:1dzjn7rn]Damage: via punching; high damage and high knockback
[*:1dzjn7rn]Structure: composed of modular blocks; most important parts are the head and heart
[*:1dzjn7rn]Health:
-depends on the material and which module
-weakest parts are hands and feet, strongest parts are head and body, etc
-destroying a block linking two parts causes one part to fall off
-destroying the heart (inside the body) kills the golem
-destroying the head blinds the golem, causing it to not be able to locate its opponent
-immune to arrows
-damaged only via "mining" (someone thought about mobs like this but I forgot who)

Creation
An artificially created golem is a homunculus. This is in regards to the big thread on alchemy. [*:1dzjn7rn]Craft the head, which will be some sort of special box you can access and in which you can place items

[*:1dzjn7rn]"Enchant" the golem heart using alchemy; since you killed the golem, you have to revive it
-or create a heart from scratch, which would take a lot of resources
[*:1dzjn7rn]Physically build the body out of whatever blocks you want it to be (probably there will be a standard shape, along with options for armor), with the head and heart in the proper areas
[*:1dzjn7rn]Insert some enchanted stuff into the head. These enchanted stuff, in specific combinations and levels, defines the behavior and abilities of the homunculus. However, if one puts in a high level of one attribute, like strength, other attributes will be very limited in level. No leveling up homunculi.

The homunculus goes out of its way to attack any enemies it might encounter

Literally be one with it. Some fancy connection device can be made that can remotely link your player's mind with the mind of the homunculus. Destruction of the homunculus will not kill your player, but your player will be vulnerable if left unguarded.

I like the idea and have had some like it myself (http://www.minecraftforum.net/viewtopic.php?f=1&t=9338). I especially like the idea of your method of creation dictating how it behaves. Sort of like making it's brain in a certain way.
The one thing I very much disagree with is the mining. I think mining is too selective a behaviour for mobs to be able to do. How would you direct it? Any mechanic I can think of would be too clunky or awkward. I'm not sure it should serve all the other types of functions you listed either. We could craft other types of "pet" mobs. Like robots. (see my thread if you demand a more in-depth explanation). For riding, we could domesticate animals, or MAYBE craft some sort of steam-punk vehicles.
I apologise for automatically assuming my ideas are good.

This suggestion is more of a fancy extension of alchemy, so mechanics/steampunk stuff is a different story.
The way I thought about controlling the mob is through a remote control staff. When you mine with this enchanted staff, the homunculus will start mining, from behind you.
I just don't want to see such mobs like homunculi serving only one or two purposes.

What would be cool is if the homunculus could be could do different behaviors based on it's 'heart' block. For instance, if heart crafting was

Gold being diamond or something super rare, iron being air, and the sponge being either:
Bucket of water- Defend (attack mobs that attack golem)
Bucket of lava- Attack (go after all mobs in the general area- 10X10 maybe?)
Stone- Guard (stay near a point and attack all mobs near that point)
Nah, I'd keep it in the head, since the heart only gives life and not behavior/intelligence. With the head, you can modify the behavior of the homunculus freely. Of course, that makes homunculi suspect to sabotage (MIND CONTROL).
To prevent that, lock the head shut 8D
