The lore is created by the player. The lore is each and every player's beliefs. There is no official lore, and there shouldn't be any.
Unfortunately, this means that Herobrine is part of Minecraft's (unofficial) lore.
I agree the lore is what you make of it. If you want to be a villager, build a village around your spawn place, if you want to be a noble, build or download a castle. Although there is one peice of universal Minecraft lore, The Enderdragon is the enemy. (personaly) I see the enderdragon as some radom dragon whos home we break into and murder over and over agean... But sometimes its hard to build lore around the enderdragon. But story lore is made by the character, that is why minecraft is a Sandbox game.

Personally, I think that the Enderdragon isn't really angry at YOU. I mean, the endermen aren't hostile to you, are they? It's just that you kind of opened the portal to his realm, and he doesn't like that too much.
See my point? If you create official lore, there won't be any way for people to theorize about things. A good game always leaves some minor gaps in the plot (Minecraft is an exception since it has no plot) while keeping the plot stable so that the player can fill in those gaps to his liking. The holes are usually minor; if a hole is there you can easily follow the plot and you might not even notice it until someone points it out. That's why Minecraft is great: you can customize everything to your liking, even the story of your world.

But sometimes its hard to build lore around the enderdragon. The enderdragon is an evil monster of otherworldly origin. When humans created the end portal it took this advantage and corrupted half the human race (the other half devolved into testificates and pigmen) and turned them into undead monsters that hunt the innocent at night. It uses the endermen to coordinate the other inferior minions.
But story lore is made by the character, that is why minecraft is a Sandbox game. No, story has nothing to do with being a sandbox. Look at GTA, AC, SR and RDR, they're sandboxes and they have stories. What makes a game a sandbox is whether or not it's name can be abbreviated (jokes).
But, yeah. Minecraft's lore should be largely left up to the player.

No, there has never, ever been a sandbox game with a story or ending... except Grand Theft Auto... and Saints Row... and Red Dead Redemption... and Crack Down... and Assassins Creed...
