Many people have suggested to change mobs and I think the same
so here is a collection of my ideas for changing mobs and some new ones.
Creepers:
By the name you would think that this creature is stealth and sneaky but their not, they just stand around like their the king of the world waiting to get killed by a player with a bow so here is some changes that would make them live up to their name
.Creepers will hide around objects to avoid being seen by the player and will run away if seen by the player but will come back after escaping the player.
.Creepers would spawn with a different colour in different biomes to help them camoflage more or to go more complex they would change colour when entering different biomes.eg. yellow creeper in desert,whitish creeper in snow biomes.
Spiders:
Spiders also feel a bit weird as they are massive and dont behave like spiders.
.Spiders shouldn't be halfly on the ground and should be using its legs to stand up not slithering on the ground like a snake.
.Spiders should be smaller and could spin webs in trees to sleep in during the day and not standing outside all the time.
.They should have a more agressive look and AI and could range in colours for differents biomes.
Zombies:
.Zombies should appear out of the ground like a zombie would and could also infect other creatures but they would die in the sun.
.They should keep banging on a door if they see you enter a house and could only break it if on hard
.They also should walk slower then most monsters but could have a chance to infect the player
Skeletons:
.Skeletons should appear out of the ground like zombies and should go back into the ground at sunrise
.Skeletons should be pretty fast at moving about because of how light they are.
.Their could be Skeleton siege like Zombie sieges and Skeletons should be more in gruops anyway

You want an entirely rewritten AI system which, from what you're suggesting, may not even be possible based on the code used to program minecraft.
My issues with this are:
Creepers are creepy. They are designed to be extremely dangerous at night -- and if you play on moody brightness, most of the time you can't see anything at night. And considering how much potential damage creepers can already do, having them harder to detect seems like a bad idea.
They do bang on doors and enter houses in hard.... that is already a thing...
You say you want skeletons to move faster because they are "lighter", but wouldn't it also mean that since they have no muscles or tendons, they wouldn't be able to move at all?
Some of the ideas seem sort of interesting, but the idea as a whole seems very unfinished, unpolished and not all that additive to minecraft.
1. not that into coding and stuff, play xbox version
2.With my experience they are pretty easy to spot because they are bright green and I suggested that they would run off if the player sees them, they could also leave cover when 10 blocks near so they would be defence less to attack
3.I knew that I was suggest that they would also bang on doors in any mode but will break them down in hard like normal
4. By faster I mean more tactical with avoiding hits and moving to high ground instead of staying in the same spot the whole time, I dont have much experience with skeletons so I have to base it on what I have watch of other people
5.I just wanted to start it not make it completed to a high standard so I dont blame u for saying that.

3. You should add squids in cannons (its a joke)
