No to the retextures. What you need is the villagers being more, well, human. So, they might need to build, need to want to eat, and possibly react more to the player.

Water should have waves and stuff. And tipping a bucket of water onto grass should have it spread out (in a large area), and slowly abdorb into the ground.
When killing the mobs, they shouldn't disappear. But lay there, dead, slowly decaying or something. And you would have to punch them more times, which would cause their drops to slowly come out.

No problem. But there is a lot more detail you need to add if you wish this to become game-mode.

Concept: Minecraft is a game that has some realism to it but beyond that the game lacks somethings which could be added. My idea is that minecraft adds a new difficulty when you make a new world called realism. It would be a calmer version of hardcore mode.

2. Food hunger bar would be effected by the time of day meaning you would have to eat 3 times a day to have a full hunger bars.

11. Once you die you can not respawn.
12. Mobs do extra damage.
13. Potions have reduced effect.
14. Bodies of mobs would die and then would lay on the ground in a frozen animation for 3 minutes.
15. Blocks such as stone and higher would injure the player as they tried to break it.
16. When you get low on health or hunger the players vision gets blurry (Maybe one bar on either)

When you think about the ideas have you ever seen a real diamond pickaxe or armor, wouldn't iron buckets rust. Also in the coding perspective in the early version of minecraft skeletons and zombies wore random pieces of armor and also they could make multiple versions of one mob and also for terrain.

Okay I have made some improvement by adding more ideas to the main post also I actually enjoy peoples harsh criticism that people have given me so far because it tells me that I need to change things.
Well a realism mode is pointless, Are zombies real? Are skeletons animated real? Are enderman real? Can pigs and sheep swim? Nope, If there was a realism mode it would need natural dangers, or manmade... Like your mines needing to be supported or a cave in, Bears, wolfs, deer, fish all that sort of stuff...
Personally this is kind of stuiped, Potions arent real, the nethers not real, theres no Dragons, We arent blocky... Do you see what im getting at? When a game becomes to Realistic it becomes boring, Take a game like oh i dont know, Skyrim! Everyone loves games like Skyrim and Oblivion! Now add hunger, thirst, low health, energy, remove the dragons, demons (Daedra i beleive there called) Imps and monsters that add adventure to the game... Now what is this new Skyrim i made?

21. You would have only 5 hearts instead of 10. Again, wishlisty.
22. Fire and Lava would have increased damage. That would make fire overpowered. In real life, it can't kill you in a few seconds.
23. Swimming underneath lava would instantly kill. Swimming in it at all should insta-kill if you are going for realism.

I wouldn't call it much of a wishlist because these are the features that I believe a realistic mode should add.
Also I would have to say in minecraft, when ever you are on fire the character is full body burning which would only be treated by extreme care. I doubt Steve would be able to walk back to his diamond castle when he is burned. Finally adding the whole list together would make the game somewhat realistic.
But you still haven't articulated why this should be a separate MODE, and not simply a bunch of changes made to basic Survival/Hardcore. Realism itself isn't a differing playstyle or mechanic; it's an aesthetic judgment.
And if the only changes you're making are intended just to make it aesthetically more realistic, then why would someone choose to play in the other modes: "Oh, I like this game, but it's too realistic. I want to play in the old, unrealistic way."
I think your suggestions would be better framed as additions to Hardcore mode, which is not simply about increased challenge but also applies a harder concept of the player as a single individual in a tough world, while survival mode has a somewhat more flexible feel of the player being perhaps one of several relatively expendable members of an economic unit such as a household or clan. That's the chief modal difference I see between survival and hardcore; survival's emphasis is on resource management, while hardcore is focused on (ironically) actual survival.
What you're suggesting just really isn't a new mode.

- No creepers.
