Have you ever noticed that there are only a few gamemodes? Each time you play, so many things are the same. In Survival, you- well, survived. Hardcore was like that too. Creative mode allowed you to pretty much just build what you want. The upcoming Adventure mode- Now that's something. Still, the game, in my opinion, could use more variation.
Below, I have listed my current ideas. Post your ideas, along with a short description. Feedback would be appreciated. (please, no "there is a mod for that". It's off-topic and doesn't help at all.)

-[Mob name here] Apocalypse
When you start the map (Create New World button), you can pick which hostile mob you want. Once you start, you have one day of invincibility. At night, the mob you selected will spawn, and there will be a LOT of them. Text in the top left-hand corner of the screen will tell you how many days you have survived. There will be permadeath. The longer you go, or the further you go from spawn, the harder the game will get. Eventually the mobs will spawn in broad daylight. Zombies and skeletons will not burn from the sun. In the place of NPC villages, there are ruins. This is true survival. Once you reach 1,000,000 meters, the world starts shaking, and white light fills the screen. Credits roll down, the map is deleted, and Post-Apoc can now be played.(P.S. Pig Apocalypse not recommended.)
-Post-Apocalypse
This can only be played after finishing Apocalypse at least once. Nature will have seem to taken over. Instead of NPC villages, there are travelling groups of villagers that can pay you to set up quarantine zones for them. You can join these together, start new nations, and try to take back the world from nature. It will lash out and attack you, but you will continue the conquest. (I'll admit, this is actually a pretty bad idea that needs development. Help would be appreciated.)

Sci-fi, Medieval, Modern, you name it! Has all the stereotypical elements of an RPG. Post ideas below.

This already exists in SMP, but it would be nice for single player. You are pitted against certain mobs, earn gold nuggets, and can buy new weapons/armor/etc. with them. The higher level you get, the tougher it gets. You also have reputation among the audience. High rep will boost Morale, which will make it easier to defeat opponents. Low Morale does the exact opposite. You can place Bets with other people.(Any more ideas?)
That pretty much sums up my ideas. As for you, well, many imaginations are more powerful than one. Discuss, and post.

In this one, you must freerun through a spacious, enclosed course, and the player's speed is upped a bit so it's a little faster than sprinting, kinda like being drunk on Swiftness Potions. The purpose is to get as far away from the spawn as possible, and you only have one tool available: an everlasting diamond sword. All attacks are critical. The player sprints through the course, bombarded by zombies with enhanced speed only. when the player is finally defeated, he/she leaves a yellow marker block to mark how far they got. Mayhaps the player can even smash his way through glass windows and across pits.
Okay, okay. I got one. how about one where you freerun through a spacious, but enclosed course, and the player's speed is upped a bit so it's a little faster than dash. The purpose is to get as far away from the spawn as possible, and you only have one tool available: diamond sword. All attacks are critical. the player sprints through the course, bombarded by zombies with enhanced speed only. when the player is finally defeated, he/she leaves a yellow marker block to mark how far they got. This is probably a bit complicated, but it would still be cool with half as many features than I mentioned!
How about a new game mode called Mobcraft where instead of you being Steve, you choose from existing aggressive mobs and the game is about hunting down and killing Steves that spawn across the map?
Your spawn points would be dark locations like monster spawners in dungeons, or inside caves below ground. But how would you see? The real question is how do mobs see in the dark now? In Mobcraft your prey - Steves, animals, villagers, golems - would glow like seeing someone on a heat vision camera. A simple change to the light level of the entity would allow this I think.
At night your fellow mobs would come to your aid in eradicating the dreaded miners trying to build on your home.
1. If you choose to play as a creeper, your creeper friends would try to suicide bomb the enemy. There would also be a way to charge yourself and make more of a bang!
2. As a zombie you want to eat flesh, and being able to knock down doors would help you do this. Your hunger bar would be very insistent as you move across the map but killing a Steve drops fresh flesh and brains which helps keep the hunger away... for a time.
3. Being a skeleton means being a deadly archer and hunting as a warrior protecting the land. Become even more deadly if you can find a spider to become the ultimate force of nature - a spider jockey!
4. Playing as a spider allows you to climb hard to reach places and shoot web to slow down your prey.
5. A zombie pigman makes you a warrior in the dark lands of the Nether, protecting your fellow pigmen. Portals serve as entryways of terror as raiding miners come to steal the all the light you have. Ghasts attack you, making the Nether doubly dangerous. However...
6. Playing as a ghast means flying through the nether (or if you happen to spawn in the overworld) and bombing your prey with firebombs. Even lava does little damage to you as you float godlike in the darkness....
Your map comes with various structures pre-built and mines dug. Forts, houses, castles, etc. would all add random structures for you to assault in the ultimate form of griefing an innocent miner.
The mode begins with a selection screen of available mobs for you to select from. This same selection screen would pop up whenever you are killed and returned to the spawn point. If you select a nether mob then you have a chance of teleporting to the Nether without a portal (same screen effect) or spawning near a portal in the overworld.
Each Steve kill gives you another life, but when you are killed for the last time the game is over. Also an achievement like "hunting the hunter" would be unlocked.
Mobcraft servers could connect to normal PVP servers so normal players and mob players can square off.
