No one would waste unbreaking IV on gold tools because it would last as long as iron, but if we enchanted them multiple times we could get Unbreaking X or something... and actually make them powerful.

Notch/Jeb made gold weak because the power to mine so fast/ hit hard. This idea is countering the point of gold, only the fast mining...
And, gold would even overpower diamond with this. Diamond was meant to be the most durable, gold to be the fastest, not gold to be fastest and strongest.
I kinda agree with your idea, but instead of being able to stack enchantments up to higher levels, I think gold tools and armor should have a chance to get a special class of enchantments available only on gold items.
For example, a gold hoe might be able to get a "Green Thumb" enchantment, which makes the hoe automatically plant a seed when you till dirt even if you don't have any seeds. Gold boots could get a speed enchantment, similar to the potion of swiftness effect but a bit slower, perhaps a 10% or 15% increase in walking speed while wearing them. A gold sword could get an instant-kill enchantment on it, making it an awesome last-resort weapon if you're ever overcome by a large horde of mobs.
According to the Minecraft Wiki, gold tools only have 33 uses before they break. I think it would be awesome for them to have a really awesome powers to offset their extremely limited durability.
