I defeated the enderdragon for the fourth time just now, and I felt there should be more bosses added into the game.
Here are my ideas:
(Note: All of these bosses will be neutral - only attack when provoked - unless stated otherwise.)
Giant:
There's already coding for the Giant, and you can spawn one using /spawn Giant.
All it needs is a bit of tweaking in the code (adjust their hitbox and such) and it would be an awesome boss.
Here is the picture of the Giant, straight from the wiki.
The Giant spawns rarely in Plains biomes, and it can spawn more than once per world.
The giant will spawn in a "castle", which would be an 8 high wall of cobble that surrounds a 50x50 area.
(So the giant won't spawn if "generated structures" is turned off)

The Giant has 50 hearts, and can deal from 5 to 8.5 hearts at a time.
Bow and arrow is useless against a Giant, and the arrow will simply fall to the ground; but if you manage to shoot one at its head, it will deal some damage.
After the Giant's health is down to none, it will start to burn and die after a few seconds.
The Giant will drop 200-250 zombie flesh, along with a few pieces of leather and a lot of xp.
Giant Creeper:
The giant creeper would be, well, a giant creeper.
It would have 40 hearts, but it only does half a heart of melee damage to the player.
Instead, it would spawn three creepers and a charged creeper every 20 seconds in its 8x8 radius.
You would be able to kill it by killing off the regular creepers first, rush in, get a hit or two on the boss, then run back out to fight the normal creepers again.
The giant creeper wouldn't take damage from arrows, because you could easily snipe it from a distance and let the normal creepers despawn.
When you finally kill the giant creeper, it will flash with the blue outlines for a few seconds (the ones that powered creepers have) then explode, leaving a mediocre-size crater and killing the remaining normal ones.
The giant creeper drops 100-150 gunpowder, up to 10 blocks of TNT and 1-3 music discs, and of course lots of xp.
Red Dragon:
The red dragon would be a boss in the overworld.
It would spawn in a "cave", which would be a 16x16 circle-like opening in the side of a mountain in Extreme Hills biomes.
(again, the red dragon wouldn't spawn if generated structures is turned off)
When you enter into the cave, there will be the red dragon sleeping; you'll have to be careful not to awake the dragon. The dragon will wake up if you sprint, break blocks, or obviously hit the dragon.
Next to the dragon, there would be a double chest on a 3x5 podium of gold blocks, which would be full of treasures - gold, iron, and diamonds, as well as emeralds, lapis lazuli, swords, bones, and rotten flesh.
Now you can choose to do one of two things: open the chest, take the loot out and hope the dragon doesn't notice (there would be a 1 in 800 chance that the dragon won't wake up) or be brave and fight the dragon.
The red dragon would have the same appearance as the enderdragon, except it's red.
It wouldn't be able to clip through blocks, but it would instead breathe fire.
The dragon won't fly too far away; it won't stray too far away from its mountain.
Once the dragon has been defeated, it will show a similar death animation as the enderdragon and drop a ton of xp, as well as a Red Dragon Egg.
The Red dragon egg would look like a spawn egg instead of a block, and you can right-click with it on the ground to spawn a baby red dragon.
You can feed it meat every now and then, and after some time it would grow into a full-size dragon, but it would still be smaller than the red dragon boss.
You can then put a saddle on it and ride it around!
Edit: I made the Red Dragon in the Overworld because Notch has said it would be an overworld boss.
That is all, and please comment what you think!

1. The first and second mobs are just bigger versions of the original
2. Giant zombie is technically not a boss, because it can spawn more than once, it is actually just a rare mob
3. Red dragon egg is just plain no
4. No one wants a giant hole in their world because of the giant creeper
5. Giant creeper is WAY to op
6. You call someone that has a 1 out of 800 chance of waking up a dragon brave... I wonder what you would call someone that attack a single creeper
7. Be more descriptive on the baby dragon
8. Killing the giant creeper is a lose-lose situation, if you kill it you will die because of the explosion, and if you run away, those smaller creepers will get you
9. Why don't arrows harm the giant creeper, do you want people to die
10. Why don't arrows harm the zombie, it is just flesh, exactly like the normal zombies
11. Giant zombie's castle would probably cause a lot of lag for slower computers
12. These bosses don't really drop anything worth while (exp does not count)
13. Giant creeper's death would cause a lot of lag
14. Use your imagination
I have a LOT more reasons why I don't support, but I don't want to spend a whole day typing.

1. No they're not, they might have the same appearance, but they would have totally different AI and movement.
2. Giant zombie CAN be coded so that they would be a boss, and who says bosses can't spawn more than once?

4. It wouldn't be giant: you make it sound like it's as if a meteor with a nuke strapped on its back had struck the world. It would be just maybe a 16x16x4 hole.
5. Minecraft needs to be harder; Jeb has been too soft on us with the recent updates. But yes, I have nerfed them down.
6. I think you misunderstood the post; I meant to be brave and actually fight the dragon instead of pickpocketing its treasures.
7. I think the baby dragon was descriptive enough; your imagination would surely do the rest.
8. You have more than plenty of time to get away from the giant creeper (sprint away for about 5 seconds would do the job perfectly) and the small creepers are just normal mobs - they'll lose interest in you if you move away enough.
9. Because giant creepers can't do any melee damage, you can get a couple hits on him easily during the 20 second cooldown time with a diamond sword w/ sharpness.
10. I made it so because I imagined a giant zombie would have a thick flesh; if you were a giant and 40 feet tall, I would imagine small arrows wouldn't hurt you.
11. The castle is part of the generation code - it wouldn't induce that much lag.
12. XP does count, actually. Because the new update nerfed xp leveling significantly, if you bring an enchanting table, you could easily get loads of badass enchanted tools. And I wouldn't mind having a stack of two of gunpowder myself

I agree that any bosses need to be more interesting than that. As far as ride-able dragons I don't see a problem, in fact I suspect Notch has at least considered this idea when he added the dragon egg. As far as a red dragon in the over world... The reason the Ender Dragon could pass through blocks was because free flight on wide arcs is really complicated to program. Mobs just have very simple navigation processes.The Ender Dragon passing through walls works because it makes the boss harder, more interesting and alien. But a Red Dragon is more traditional and much less likely to warp through walls.

14. I'm not that creative with coming up with ideas, but I tried my best.
