Piercing: The arrow ignores a percent of armor, and deals VERY high damage to it. Useful on SMP or if the developers implement armor on zombies/skellies. Kinda rare enchant.
I: Ignores 10% of the armor
II: Ignores 20% of armor
III: Ignores 30% of armor
Poison: Basically no need to explain... Applies Poison I effect on hit.
I: 10 seconds of effect
II: 15 seconds of effect
III: 20 seconds of effect
Sniping: The arrow flies MUCH faster and is less affected by gravity, flying on an almost straight line.
Only one enchantment level.
Charging: Charges the bow faster.
I: Charging time reduced by 25%
II: Charging time reduced by 50%
Hunting: Kills all passive mobs on a single hit, and the arrow is recovered on that situation. Only one enchantment level
Spread: Shoots 3 arrows at once when you charge the bow for 5 seconds. The arrows are fired at 30ยบ angle from the middle arrow. The shot consumes 3 durability. Only one level.
Draining: Heals 0.5/1 HP per hit.
I: Heals 0.5 HP
II: Heals 1 HP
Blocking: Blocking reduces less your speed. Only one enchantment level
Scavenging: When collecting stuff like cobwebs, grass, and leaves with your sword, its durability doesn't get reduced. Only one enchantment level.
Fierce Attack: When right-clicking, instead of blocking, the sword will do a power attack, which consumes 4 points of durability, but deals 40% extra damage and consumes a LOT of hunger (maybe 1/2 hunger point per 2 fierce attacks). Only one level, very rare enchant.
I like these except I think piercing and hunting are very overpowered, ignoring armor completely would make armor practically useless in PVP and hunting would make the player even more overpowered in singleplayer where its almost impossible to die.

Piercing would be very rare, and hunting would only kill passive mobs at a single hit (squids, pigs, sheep, cows, etc.)
You could instead have % chance trigger (and adjust the armor reduction), or cap it at 33%. And I'm pretty sure it implied that it ignores base armor values, not the enchantments on them.
Piercing III would be far to effective. 3 hits to any player no matter what they wore. Nerf it!
Poison no because it's a potion and I don't think enchantments should go that way.
Sniping is fine.
I like how bows take a while to charge so it prevents them from beng used close range.

I made poison because I thought it would be fitting (also, potions aren't the only source of poison, we have cave spiders and spider eye)
And charging won't be a big deal, 50% faster charging isn't enought to make the bow a 1.7.3 machine gun
