I had a hard time managing all the details in a logical order (I had to rewrite this a couple times) so I'll just list them out here.
The Adventure mode is a new game mode, in addition to already existing Survival, Creative, and Hardcore.
You would NOT be able to start a fresh new world in Adventure mode: you would only be able to convert pre-existing worlds into Adventure mode.
In Adventure Mode, you can't break ANY blocks. This includes ALL the blocks in the game, including tall grass, wheat, torches, etc.
But you CAN operate levers, buttons, both pressure plates, wooden doors, etc.
You are also allowed to open workbenches, furnaces, and chests. (but no looting out of dispensers)
The way you would change a world to Adventure mode is really simple: just click to the "Rename World" button and you click the "Adventure Mode..." button.
Then it would bring up a GUI with a whole lot of different buttons to customize the settings of the adventure mode world, such as "Enable Breaking: Leaves, Vines, Tall Grass, Flowers, Dead Bush, Mushrooms, Wheat, Nether Wart, Cakes, Fire, Cobwebs, Clay", "Enable Crafting", "Difficulty: Peaceful, Easy, Normal, Hard", "Enable Creeper/Enderman Damage", and "Enable Gold Levers".
Now everything's pretty straightforward, except for the Gold Levers. What are gold levers, you say?
Gold levers are crafted like a regular lever, but with a gold block instead of cobblestone.
The Gold lever will serve no purpose in other game modes other than aesthetic purposes, but in Adventure Mode, gold levers can be placeable as well as breakable, unlike other blocks.
Gold levers can only be placed on gold blocks.
This game mode would appeal to custom map creators and players, when you're releasing/playing an Adventure map where you're not allowed to break blocks.

Well, you can obviously do that, but what good will that do?
The only way to gather resources if you start a fresh new world, leave, and put it in adventure mode, would be to desperately wander around and look for a village to raid the small amounts of materials in them.
You can't break trees for logs, wheat for bread, or water for a water bucket, so I would guess it would be almost impossible, so no point there.
The only reason that you can't start an Adventure mode world rightaway is to gather those resources (whether it by legit or from the inventory in creative), build yourself a custom map, and switch it to Adventure mode so you can play it in the classic Adventure map style.
