There are currently 5 or 6 Villager textures in use, one of them however, is not being used at this moment. So far, they do not do anything. Mojang is trying their very best to increase their AI intelligence if you have not known already. So far, Mojang has made the Villagers more intelligent by having them claim homes, run away from zombies, open/close doors, and that's pretty much about it. Plus, in the future, there's going to be a trading system between the players and villagers, which could be kind of cool. My point is, there should be jobs between the VIllager's Occupation. For example, the Farmer is right now, a wandering kind of guy. But what if we made him actually be a farmer, and harvest wheat and plant seeds? This would have total meaning of the Villager's Texture! Below this paragraph is what they should be doing, although it is pretty much self-explanatory about what they're going to do.
Farmer: Farms Wheat, plants the seeds back. Also tills the land. The Farmer just needs to move near the wheat, look at it, and move to the next one. To prevent over-tilling, Villagers will only till land that's been converted to dirt, when it originally was supposed to hold wheat. The do not trample crops.
Butcher: Kills animals such as cows, pigs, chickens, and maybe sheep. They deal enough damage for 5 hits to kill it. To prevent over-killing passive mobs, they will only kill 0-1 mobs per 3 days. They kill only in the middle of the Village to 100 blocks ahead. It will not go any further than that. If there aren't any to kill, it will stay in a butcher house.
Librarian: Holds a book in its hands. They can place a written book in a chest for anyone to read. To prevent over-placing books, they will only make up to 5 books. They can also read books.
Priest: Prays in their church by standing still and moving its head up and down. They'll do it anywhere.
Blacksmith: Will have a pick-axe and start making something. Whatever it makes, it'll put it into its inventory for the future trading system. It'll usually stay at one house.
Villager: The unused texture of a Villager. What they'll do is what normal Villagers would do right now, except going too far off distance. They'll stay in one house and one house only during nighttime. They pretty much wander around like what the Villagers now do.
Children: They are special. They do not do any of this work. Instead, they play around, and they do not go far off the distance. They'll stay close to their parents during night. They will continue to play tag.
So the general idea is, more intelligent AI for each Villager Texture. It will create more variety in one village.
attacks
charge does 2 1/2 hearts
knife throw does 2 heart with a range of 10 blocks
steal does zero damage but make you have the Nausea effect for 20 seconds must be within 1-2 blocks of you take 1-4 random item (will take whole stacks) and runs
spawns in a village (underground hideout)
they steal from other villagers Iron golems try to stop them but the bandits are too fast.
when killed they drop a map of the village, this shows where the hideout is
all of the stolen goodies + some rare loot are in a chest

the Rare loot is not effected by the stolen Items
E.G. Rare loot 5 beef and then steals 5 beef from the butcher total 10 beef
The gear give less protection than leather but increases speed by 10% when wearing the full set
the dager is throwable but must be recollected. Does 5 heart of damage when thrown it does 4 hearts
