Villagers obviously have some sort of civilisation set up. They also have 'jobs'. I doubt they have barter for some reason though. Normally people that can obtain obsidian, armour and robotic defenders are also advanced enough for a currency system.
So my suggestion is that killing villagers has them drop the currency they use. To not add anything to the game this currency will be gold nuggets to represent gold coins.
This will give villages another potential use. Plus it adheres to very basic game fundamentals in my opinion. Risk and Reward. Villages can get Iron Golems which attack you when you try to kill a villager. In larger villages this makes getting gold a difficult task. You get a reward through risk.
Now you may be thinking "Well I can just go to small villages and kill them but leave a few so they respawn. Free gold with no risk!"
To combat this villagers will only drop gold if an Iron Golem is within 75 blocks. This makes it so you can only get gold from large villages which are defined as villages with an Iron Golem in this case. I doubt the Golem will commonly wander more than 75 blocks away from the village.
I think that this would give more uses to these villages. They kinda are still pretty useless as is. This would atleast make them slightly more useful.

I dont think this would be a good idea, because it would only provide more incentive to kill the poor things. If trading ever gets implemented, and killing them gets a better reward than trading, it would make trading useless, which would be a shame.
No, instead maybe a currency system to trade with gold, but if you kill the villager with the items he only drops 1/4th of the stuff he has and rarely any rare stuff.
I'd love to have them drop something! Then I can have a souvenier & track of my villager genocide! Either that or I need to build some sort of counter for a suicide box, which wouldn't really be that hard either.
Well, this is a handy lesson. The other day, I was walking down the street and I saw all the strangers there, moving about, having conversations, and just generally getting in my way. What USE do they serve, I thought to myself?
But then I learned that if I kill them, they'll drop money. Hooray! Now they're useful!

Okay, look. I appreciate what you're getting at here. Maybe there is a certain logic to it. But that logic is informed in large part by other games, where murder and looting are de rigeur. Is this really something we want to encourage here? And also, is it actually realistic? To a first approximation, maybe: villagers probably would be carrying coins. But iterate the game a little: would they carry coins if it were a basic part of the economy that players slaughtered them on a regular basis? Wouldn't they quickly wise up, and stop carrying it? Or wouldn't they invest a bit in some better defenses?
Besides, are you actually expecting me to feel sympathy for the player who murders a bunch of defenseless villagers (or even ones defended by an iron golem) and isn't suitably rewarded for his heroism? Oh boo hoo. The poor, ill-treated player, unrecognized for his valorous brutality!
Not every stupid, risky thing you can do should be rewarded.

As for why I say no, it is because you can trap the iron golem in a house and go on rampage against the villagers.
