Theres a few things that could be added to wolves and dogs. First off, wolves should come in packs. Of course there wouldnt be too many just 3 - 6 maybe. Although, wolves packs would have to be pretty rare.
When a wolf is tamed it should be able to locate things. For example, if there is a zombie or skeleton underground and the wolf happens to go near the area it will start to sniff around and scratch at the ground.
Next, wolves and dogs should growl at cats and ocelots. This wouldn't really do anything except add some realistic things.
Also, I think that you should be able to craft different colored collars. That way you could tell the difference between your wolves and this would also add a use for leather. The collars would be crafted like this:
You could just craft these with dyes to make them different colors, and you could add a gold nugget for a little tag
Another mob that I think could use a little more is a cow. I think you should be able to make a wagon and use the cow to move you along the surface. the wagon couldnt be too OP so the wagon would have to go a tad slower than a powered minecart and couldnt be able to go over anything 2 or more blocks high.
Also, cows shouldnt be too easy to kill. They should a neutral mob. How this would work is if you attack it, it will run off and then try to ram into you.
For cats, they could be able to dive into water every once and a while and bring back a fish and should be very quick swimmers.
Now, for Spider Jockeys. I like to think of these little buggers as mini-bosses. However, they are far too easy to kill. First off, enchantments could be useless against them, this would definately add more of a challenge to minecraft, having mobs that are invinsible to certain enchants. also, when the skeleton and the spider are together their health points should be doubled but when separated would be back to normal. now finally, spider jockeys should be able to jump 2 blocks instead of 1.
Finally, the most useless mob in the game, squids. Im not going to write an enitre paragraph about writing in books using a feather and squid ink, because everyone has already heard that idea.
One thing that could be added to the squid is if you attack the squid and it doesnt die it will flee very quickly and shoot out a cloud of ink, temporarily blinding you.

Wolves do come in packs, at least from what I have seen. Different colored collar doesn't seem to be practical. All of the wolves are the same, there are no differences, so you don't need any different colored collars to keep track of same wolves.

well i wouldnt say they come in packs, and if they do they arent very good packs. yes, ive seen 2 or 3 wolves kind of close to eachother but im talking about them traveling along in groups. and for the collar, it would be a nice touch i think. sure all dogs are the same but having them look exactly the same is kind of lame when you have a bunch of them. but thanks for posting

On your points on Spider Jockeys, I have to say I disagree with them for the most part. I've never had a problem killing a Spider Jockey with even just my fists, so I don't think making so enchantments don't work on them would make too much of a difference. And I'm not sure exactly what you mean by their HP being doubled. IIRC they are treated as separate mobs so would their HP be combined then doubled or would each one get 2x the health?
Frankly I think it would be a much more dangerous mob if it had some better AI. Right now the Spider is independent of the Skeleton so it just runs at you, putting both mobs in easy range. If it instead used it's speed and climbing skills to keep the skeleton out of your range it would be a much deadlier enemy imo.
Also, I like the idea of the squids fleeing but unless you have more of a reason to kill squids I don't see the point. Right now you only need to kill Squid for 2 ink sacs, which are used to dye 2 sheep, which can then be bred and sheared for black wool endlessly.
