We all know that Jeb isn't quite finished with the Villagers as of yet nor has much thought gone into them thus far so I consider this the best time to throw my idea into the pile to fester with the other failed attempts at making our beloved game more interesting.
Since the NPCs having "jobs" is the larger portion of this idea I'll start with it. Notch/Jeb(can't remember who) said that eventually the NPCs will have their own functions like having shops and that sort of thing. Let me give some examples of different NPCs and what they do:
Blacksmith
The most important of the NPCs in my suggestion being as he would be the hub for currency in which to buy things from him and other NPCs. The way this works is that you are not able to sell anything to NPCs but only to buy unique items from them that are otherwise difficult to obtain or unobtainable by any other means.
Here's how the curreny works:
To take 1 Gold Nugget and exchange it for 1 Gold Coin which is an item in your inventory that can be removed and placed in a chest. 1 Gold Nugget = 1 Gold Coin however, if you take 1 Gold Ingot to him you can exchange it for 12 Gold Coins(this is to keep Gold Bars still overly useful to find and hand over rather than grinding in the Nether for Nuggets.)
With the Gold Coins in your inventory you may purchase things from the Blacksmith and other NPCs. Here's some examples for the Blacksmith's inventory:
Weapon/Tool Repairs - 3 gold for full repair from yellow, 6 gold from red. Armor Repairs - 5 gold for full repair from yellow, 8 gold from red. Flintlock Pistol - 20 Gold. Deals 6 hearts of damage, fires up to 30 blocks, takes 3 seconds to reload. Flintlock Ammo - 5 Gold per 1 unit of ammo. Pickshovel(Shovelaxe?) - 50 Gold. Acts as both a Shovel and a Pickaxe. 311 Duability. Cannot be enchanted.
Various items like Iron Ingots, Redstone, and very rarely diamonds. Inventory refreshes ever 5 Minecraft days.
Librarian
Monster Book - 10 Gold. Gives various details of each enemy NPC in the game including a picture ans strategies for fighting them. Craftables (Wood) - 5 Gold. Every crafting recipe for wood-based items and blocks. Craftables (Iron) - 7 Gold. Every crafting recipe for iron-based items and blocks. Journal - 3 Gold. An empty book with 20 pages for the player to write in. Combine with wool at a crafting table to create different colored Journals. Also has the option of changing the name of the Journal itself. Magic Map - 20 Gold. Complete map of the area surrounding the Player's current spawn point be it a bed or the original spot.
Also sells various items like Bookshelves, Books, and Maps.
Alchemist
The idea of the Alchemist being that the player wouldn't have to tredge through the Nether to make their own Brewing Stand but brewing your own potions would be far less costly.
Bottle 'O Enchanting - 100 Gold. When left in a chest this particular flask will automaically recieve any of your levels, up to a maximum of 5 whole levels per flask, upon your death. Love Potion - 100 Gold. When used it gives the player a 2 minute buff that attracts any livestock-NPC(chickens, pigs, cows) to you within a 25 block radius. Underwater Breathing - 100 Gold. Gives the Player unlimited breath for 2 minutes.
Also sells various potions and materials used for Brewing at very limited ammounts chosen by random after each inventory refresh after 5 Minecraft Days.
i dont like the gun idea but i do like the recipe books, combining all of them would make a large recipe book which will contain secret recipes like records, recipies tht use the dragon egg, and more
I don't agree with the gun concept, but i agree with the whole villager thing . For now though, sadly, we must use the Mellinare mod..
Note: I find it funny you said "So you don't need to grind in the Nether" When 1 gold bar (in a crafting area) will come out as 9 gold nuggets. (Alot of servers use this as a currency system... 1gold block = 9 gold bars = 81 nuggets)
No one here really wants guns. And you do know you can craft gold nuggets with golden ingots? Just dump one on the crafting grid and huzzah. 9 gold nuggets.
Other than that i think this will bring more excitement and interest to villages. Good idea. Just some things have to be changed.

To all of you people who think Notch is still working on the game, he stopped working on Minecraft in late 2011. Get your facts straight and stop spamming his twitter about Minecraft updates.
I'm not too keen on the gun idea either but with the amount of complaining on the forums for one it's likely that Jeb will cave eventually and the point of Gold Ingot yielding more gold value than the required 9 nuggets to make gives Gold Ingots some use and value other than just for a useless clock.
