I don't have a problem with them going up or down blocks, though, as long as there are other forms of vegetation that would be there. Short grass would still work fine, and flowers too. If Flowers and Trees could spawn on their own, creating forests, pastures, and wildflower fields, I'd have no problem with that.

I think those questions would be asked by a very small minority of individuals. The grass would cause them to ask questions, but it would not effect them in any other way, unless they chose to investigate. This is a neutral entity on the learning curve, and a welcome one by me.
This isn't really necessary, the more notch adds in the game, the harder it will be for newbies to learn.

You're not serious are you? A difficulty curve is a major part of video games, and if you can figure out everything a few seconds in everything will be dull.

+1 on idea but it should not look too much like wheat. Also +1 on the idea of flowers spreading, but mushrooms should also spread.
It would give you the ability to make Pastures for sheep to graze in. Also...

Its grass, what do you have to learn about it?
This game is so simple, you could be from 1000 years ago and understand it.
Questions like:

So long as it isn't as easily trampled as wheat. That would make it kind of dumb to use as a tool for making pastures.
