Yes, ingame instructions are a must! I don't understand why they don't have them... What about pressing the "h" button next to a block/entity will tell you about it and lists crafting recipes with that block in it?
Ex:
Press H looking at tree: This is a log block. It is crafted into wooden planks like so, which can be used for many recipes or building.
Press H looking at a creeper: This fellow has an explosive personality. You'd best keep away unless you seek his sulfur.
Or something like that. Kind of like a poke-dex of Minecraft blocks.
Why not use the recipe book idea in Risugami's mods for the parts for recipe's. Then like a Monster gallery or something in the options menu, which describes the current enemies and monsters in the game.
Exactly what XylethTheAlmighty said. Notch is on record saying that the lack of in-game instruction is a good thing because it fosters community involvement. People have to come together online to read forums or wiki articles.
I'm not saying I personally agree, but it seems unlikely that Minecraft will change this part of its nature.
the reason why there's no in game instuctions or recipees i because it makes it so that players have to communicate and figure it out as a community, and before notch left he specifically said he didn't want any in-game recipes

Yes, I do read Homestuck >:]. Its a webcomic about a game that saves/destroys the world
He [Notch] speculated that one of Minecraft's strongest suits is its lack of proper tutorials or official instructions in-game, as it always encouraged players to interact with each-other to exchange crafting tips and secrets. He was especially thrilled at how players became dependent on one another for the information, and it developed a culture of its own - a culture of crafting.
For me, it loses the "in-game vibe" when I have to leave the game and search a wiki to find recipes.
I think Notch should hire a separate team for this very purpose.
The addition of this feature would bring many more players into the game and keep them there.
Regular recipes could be hidden in the normal world in strongholds and villages. Nether Strongholds could have advanced recipes...
I understand its a big task... but I think it should be undertaken.
In addition, it would make a point to the game... to find all the recipes!
