Currently, the Fortune enchantment doesn't work on Gold or Iron. This is logical, considering that getting two blocks out of one looks a little... odd. But should we relinquish our possible extra iron for that small effect?
The answer is partially.
The way I see it, we should have it so that if a pick with Fortune mines an Iron Ore, the Ore becomes a
"Fortunate Iron Ore" and goes in your inventory. It will have a purple tooltip and whatever the level of the Fortune it was mined with is tagged onto it.
You are placing a lot of hope into an enchantment. I wouldn't want this to be in vanilla minecraft because Iron Ore and Gold Ore can only possibly generate one ingot each in logical Minecraft terms. What is one cannot become two.

Yes, but doesn't the same then apply the the fortune enchantment in general? One Diamond Ore can only possible generate one diamond? What is one cannot become two?

Unless a tool blessed by the gods demands that there be two, then one can be two.
YES! This is a lot more practical than the original fortune enchantment, and kinda feels more "magicky" (yes i know that the word is magical, i just like the sound of magicky better).

Once smelted, the Fortunate Ore has a chance to make multiple ingots instead of one.

This is magic we're talking about.
