Well, I have a couple of considerations. I would love to have finite water, but I kinda like the default physics, they're funny.
So anyway, I have a few ideas.
DEEPER OCEANS
I think the oceans should go almost down to bedrock. Nice and deep. I've considered that terrain such as trenches couldn't really happen like this, but... the minecraft map isn't really deep enough anyway. When they quadruple the depth of the map, we can accommodate.
SEDIMENT
The dirt and dry sand at the bottom of water bodies is just weird. Adding sediment to the game would make the lakes and oceans less ugly (and this could separate the deeper oceans from bedrock).
BREATHING TANKS Or similar stuff
People mention stuff like this sometimes, but I figured I would tac it on to prevent people from saying "we don't have deep oceans because you can't hold your breath long enough".
SQUID!!
Persistence
Squid need to be persistent like the other passive mobs. Also, movement changes, such as moving in schools (not just spawning together, but moving together) and generally being more agile would be kind of cool.
Breeding
Yes, that's right. I want to breed squid. I think squid are awesome (octopuses and cuttlefish more so, but they aren't in the game). I've always wanted to have an aquarium full of squid.

Spiders
Spiders are unique in that they are passive in sunlight. Not only that, but they're cute (at least I think they are... *haters gonna hate*). So I think we should be able to tame spiders! They would be more dangerous than wolves in a few ways, but they would be a bit harder to tame, mostly because of their commonality, as well as the fact that they're spiders.
Silverfish
You know what? I think we should just be able to tame anything that isn't a supernatural or unnatural entity (spiders don't count, they're just bigger versions of normal animals).
