Today, I'll be putting forth the idea of items that would be made much more useful in stacks, and benefit gameplay.
Many items can be a hassle to carry around, or become nearly useless due to the space in inventory they consume. Signs for instance, are extremely bothersome to carry around when creasting message boards, or long lines of text. Splash potions of harming make for near useless weapons due to being in single stacks, and needing many to kill an enemy. The following list will be of some items I have noticed to be particularly bothersome during gameplay.
The items will be organized as follows: [ITEM] - [CURRENT STACK SIZE] - [SUGGESTED STACK SIZE] - [ADDITIONAL NOTES]
Doors - 1 - 2 - For ease of creating double doors.
Signs - 1 - 16
Potions (Drinkable) - 1 - 8 - If inventory is full, empty bottle will be dropped.
Potions (Splash) - 1 - 8 - Who has the space/time to fill your hotbar and/or switch out splash potions when fighting creepers?
Boats/Minecarts - 1 - 4
Saddles - 1 - 8
Mushroom Stew - 1 - 8

I agree. EVERYTHING (except of course tools) needs to be stackable. Though I think everything except the potions need to be stackable to 64, where potions stack to 16 (or maybe 8), so it is more convenient, especially for large builds like castles or mob drop traps.

With that logic, porkchops, steak, etc. wouldn't be stackable.
