I was thinking that if you get 4 slime balls then you craft them in the 2x2 crafting table. It'll create a slime block.
The only thing I can think what it could do is to make you jump one block higher. Any other ideas?
It could act as a general spring. If a minecart hits it, it bounces off with the same force. If a player or mob drops onto it, they bounce back up with just a little less force.
Could absorb fall damage, to make quick drops without water. Maybe slime blocks could act as glue, and a stick piston could pull 3 blocks (two blocks with a slime block in the middle).

If used in that way it [a sticky piston] would actually be able to pull seven blocks. Each face of the slime block could potentially have a block stuck to it.
If you use more than one slime block, assuming they can stick to themselves...you could potentially pull thirty-six blocks. ...Actually wait, no. Three hundred forty-three blocks? If you made a 7x7x7 cube of slime...and possibly more. Yeah that would obviously need to be limited in some way.
Anyway, I like every potential use listed in this thread so far.
Negating or otherwise modifying fall damage.
Bouncing entities.
Sticking to other blocks.
Inhibiting movement.
Being icky sticky, block-water.
Saving three inventory slots for every four stacks of slime you're carrying.
