I'd like to be able to craft ore blocks. Place a block of stone in the center of a crafting grid and some amount of what you get from the ore around it. Lapis would fill 7 or 8 slots around the stone, redstone ore would take 5 redstone, diamond, coal and gold take one, and iron's done a bit differently. It takes a block of stone, an iron ingot, and a bucket of water. The water is used to convert the iron ingot to iron oxide chunks that will be in the rock. You get the bucket back though so it doesn't eat all your iron. Maybe the crafted ores would have a slightly different texture with cobblestone replacing the stone between the pieces of material.
Why do I want craftable ores? Because I like to build with them. Two of them drop themselves by default but I'd like a way to change them back after they've been smelted. As for the others, diamond ore can be used in traps, redstone ore glows, coal ore looks like the moon and can be used for lunar-themed builds, and lapis ore can be used for other stuff.
Why can't I just use a pick with Silk Touch? It's almost impossible to get Silk Touch even with tons of XP. I know it's supposed to be rare, but it might as well not exist at this level.
Off-topic: Redstone dust and iron ore should be usable as dyes. Iron ore would color wool dark orange and redstone would make it glowing red with a particle effect.

Silk touch isn't that hard to enchant... Read the wiki about enchanting, when you know what to do to increase the odds you'll have an easier time getting it.
I don't think Better Enchanting works in multiplayer. I can't give myself xp to enchant tools without being an admin and can't usually convince the admins to give me creative. Very rarely they may give me a stack of the block I need, but other than that I have to mine everything. And what if I already mined all the ore that I can reach in a reasonable amount of time? What do I do then, just run off to the edge of the map and mine there with silk touch? And what if I fall in lava or get killed by zombies and have to go back to where I was mining? My items will despawn before I get there, and if I had used a bed there, chances are I'd never see my house again.
This is where crafted ores come in. With the materials I've mined, I can put coal into rocks and build a second moon in the sky. I can make a floor that glows when I step on it or a decorative clump of gold pieces embedded in a wall.
Also, Silk Touch works on giant mushrooms, mycelium, double slabs and other blocks that can't normally be collected. Crafting ores will only get you ores. That way if you want unobtainable, non-ore blocks you'll still need Silk Touch.

Putting chunks of material in a rock != anything remotely atomic. I'm not suggesting the ability to turn iron to gold or diamond or redstone. I just want to put my stuff in an ore block so I can build with it.
