Salt is one of the most highly used minerals by humans.
SALT WILL NOT BE AN ORE IN THIS GAME, WE HAVE ENOUGH ORES.
Gravel has a small chance to drop flint, so I suppose that Sand having a chance to drop Salt would not only be logical, it would make Sand just as useful as Gravel in terms of drops.
Here's what our salt can be used for:
Salt can be placed on Blocks, giving an "aura" in that block space without actually affecting the block itself, that prevents Snow from building up on that block. (the Aura concept is to prevent massive amounts of new block sub-forms to be added)
Salt can be combined with Wheat in the "cookie" crafting pattern in place of the Cocoa Beans to make Biscuits, which restore 1 hunger point and only 8 hunger saturation.
Salt can be crafted together with food items to preserve them, making them restore more hunger points than normal. (I wouldn't want to be mean to Jeb and make him make a food rotting system, that's too much.) For instance, Steak becomes Beef Jerky, Pork Chops become Bacon, Bread becomes Waybread, etc.

Salt can be used to collect Ice blocks. (ice blocks will now no longer generate water in the Nether)

Salt can be made into "Salt Licks" which can be fed to animals to make them stay still, without the need of fences.
