Deserts can be a neat area to build, especially by mountainous areas. However a little dull with little variety and reason to explore. Here are a few ideas I had in mind.
As far as the landscape, Deserts are not all the same in real life.
One way to make deserts more realistic is to add large areas with clay soil, and large gravel pits.
As for survival, hunger grows faster in the deserts.
Cacti could also drop "Prickly Pear" occasionally, which restores 3 hunger. Could also be used with awkward potion to create satiation potion which acts as an appetite suppressant.
Have oasisis (oasi?) (oasis'?) (multiple oasis entities)
Have dunes
Have traveling desert nomads
Have camels and desert mobs

Why do you think that there should be more variety? It's a desert. Sand and cactus. In real life, what else do you find when the nearest populated area is a megameter away? Deserts are fine the way they are, in my opinion.
