In the current game endermen are wimps. They seem to run away as often as they can and they don't feel even slightly scary. If you see them without looking directly at them they are almost no threat provided you remember they are there. This suggestion could be over powered but maybe if the spawn rate was lowered this could work:
Endermen also become hostile if the player walks very close to them (Maybe within a 5 block radius)
Angry endermen should also have the ability to break a limited number of blocks in their attempts to kill the player (Maybe 4 or 5, just enough to get through simple defenses)
A lot of people have wanted tunnelling mobs for a while now and i believe that endermen could fill this void nicely. It would give us a reason to build defences better than a two block high dirt wall.
Pumpkin Head+Fire aspect sword is the easiest way to kill them, you dont really need the pumpkin head cuz if u have fire apect on your sword and hit an ender man they would catch on fire, and would die since they cant go near water and even if they teleport there still on fire, easiet way for me.

I like Enderman as they are, they are peacefull unless you challenge them and then they can kick ass if your not warey.
I wouldn't mind seeing Endermen get more agressive on Hard and Hardcore difficulties but think their about right for normal and peacefull.
Tunelling mob is an interesting idea. However, what if the mob tunnels through something precious? or sullys a carefully crafted landscape, floods a tunnel, destroys crop or tears up a minecart track. I think any tunneling mob would have to be optional for me.
Its some interesting ideas though. Theres certainly merit in what you say.
