There SHOULD be flying mobs in the overworld, so I will ad logical additions for those mobs.
PS: Chickens glide. Not Fly
Plains: Common Bird (Colors: Brown/Black, Blue/White, Red/White) Passive.
They don't really do anything, but their eggs can be cooked and eaten.
Mountains: Falcon (Colors: Brown/White) Fast, Neutral.
Falcons fly around, nesting in hilltops and looking for small prey. Randomly dropped meat and feathers are a good indicator of their presence.
Ocean: Seagull. (Colors: White) Slow, Passive.
Seagulls loft around the water, grouping together on islands.
Forest: Eagle. (Colors: White/Black) Neutral.
Eagles spend their time looking for places in the trees to nest in.
Swamp: Crow (Colors: Black) Aggressive.
Crows hunt for mushrooms, stealing them and depriving you of food. Quite pesky, but a good indicator of nearby shrooms.
Tundra: None. Too cold.
Taiga: Owl. (Colors: Black/White, Brown/White) Passive/Aggressive.
Owls hunt passively for nearby animals. If it sees them, it swoops down and kills it. Randomly dropped feathers and meat are a good indicator of nearby owls.
Desert: Buzzard. (Colors: Brown/Red, Black/Red) Neutral.
Buzzards are attracted by Rotten Flesh, Raw Pork, Raw Steak and Raw Chicken lying on the ground. If you approach it with raw meat in your inventory, it will become agressive and try to kill you for the meat. Seen in packs of 1-6.
Cave: Bat. Bats actively search for Animals at night, but return to caves during the day. When they find an animal, they group together and kill it for it's blood. They appear in groups of 4 to 10.

The reason why these "useless" animals are really not being put in the game is because they deprive useful animals a chance to spawn. Minecraft doesn't spawn an unlimited amount of animals. Download a mod like mo creatures and watch how rare cows or sheep become compared to everything else. It's because the custom animals take up the spawn slots for other animals.
It seems like a plausible idea to me, but how much do you know about birds because geese for instance lay their eggs and gather in the tundra during the summer. this idea needs more work but it seems plausible to me. who knows, falconry could be the next big thing in minecraft

I'm saying Minecraft is not good because they refuse to add things just because it doesn't have a purpose in the game. Thing is, Minecraft abruptly ends if you play it a certain way. Step 1: Diamonds. Step 2. Obsidian. Step 3: Stronghold. Step 4: Endermen. Step 5: Win.

Have you ever programmed a game using Java? You cannot waste resources on useless things especially in a game as big as Minecraft. This is not an engine designed specifically for this game and as long as that is the case you will not be seeing any changes.
