So we all know how Minecraft goes; find wood, get stone, find iron, and slowly work your way towards diamond, then work on the more advanced parts of the game.
So I'm not saying new ores or jewels, well not entirely. I'm suggesting higher grades of materials.
Wood - Requires axe to obtain
> Fine Grain Wood (30% chance to find instead of wood, gives 6 planks upon crafting, 2x better than normal)
> Aged Wood (20% chance to find instead of wood, gives 8 planks, 3x better than normal)
Iron
> Steel (10% chance of finding steel along with iron, 1.5x better than iron)
> Titanium (5% chance of finding titanium along with iron, 2x better than iron)
Diamond
> Crystalite (5% chance of finding along with Diamond, 1.5x effects (Defense, damage, speed) than diamond)
> Onyx (5% chance of finding along with Diamond, 1.5x durability)
In addition, higher graded materials have much higher enchantability than their normal counterparts.

I'd rather have completely new ores than a chance of getting a different unstackable, unworkable ore when I expect iron. There's space in the ground for more ores. People just ***** for no reason, even though we haven't had a new ore since 1.2.
It's time tht they start adding more gems ore ores. We need limestone deposits more than this.

You can only obtain the new wood with axes.

Aged Wood: Darker, worn out look
Steel: Shinier, brighter than Iron
Titanium: Shinier, darker than Iron
Crystallite: Glossy white recolor of a diamond
Onyx: Jet black diamond recolor
