It would add nothing useful, unless you went with reptillian's idea, but first you to think of the special effects, so this topic needs a lot more work before it would even be considered an idea that would be good to add into minecraft.
Maybe slime balls could be crafted into decorative blocks. And diffrent colours makes the blocks diffrent.
Although one thing is that slimeballs are already used in sticky pistons, so these wouldn't be used much. Plus we already have wool blocks as decorative blocks in a variety of different colors.
It wouldn't really need to have a purpose other then to look cool. If everything would need a purpose we can remove roses, wool, bricks etc. Just different colours would be nice.

I think that slimes could feasibly come in 4 colors excluding the magma cube. Any more than that would be overkill.
Each slime would have a slimeball of its color. Each color would have a different property to it and would be placable on a flat surface.
Green would be the sticky slimeball. It will slow mobs/players that move on a block with this slimeball on it. (you could craft a slow rail that slows you down with green slimeballs)
And then there's this idea: adhesive for pistons
Red could be the flammable slimeball. If you placed it on a block and set that block on fire, it will stay on fire longer.
Blue could be the bouncy slimeball (portal reference). It will increase the height you can jump by half a block. (Might be unrealistic for minecraft, so an alternate idea is the slick slimeball. A blue slimeball placed on a block will give a slick surface on that block. I think they should go beyond just giving a property of ice, since ice is a hard surface, and slime would be a soft surface. The weight transition and feel would be different. BTW a slick (Quick) Rail could be made with this, which would speed you up faster than booster rails and do not require redstone. Red slimes like other colors of slimes would be exceptionally rare).
if there was another slime, that would be the slick one to accomodate the bouncy slimeball. I think that a rubber pad construction would better suit my bouncy idea more than slimeballs. So three might be ideal for this idea to work realistically.
In the aether mod slime's come in a few different colours and do different things its pretty cool. If slime's were different colours in default Minecraft then that would be cool, but also I rarely find slime's legit.
