So, we all are aware of the new Jungle Biome, and I think this opens up an insane amount of possibilities, so I'll start with the simple ones:
The jungle floor should be completely, if not almost completely covered by tall grass. It's the Jungle, basically a bigger and more overgrown forest.
Next, the ground should have roots on it. Basically wood on the floor in a line-like formation, to simulate roots.
These first two are mainly just for appearance, to add to that jungle feel.
Now for the slightly more complicated part:
The Deep Jungle:
No, I don't mean underground. The deep jungle would be found at the center of a Jungle Biome, and would be the more dangerous part of it.
In the Deep Jungle, the trees would cover the sun, making it dark, dark enough for monsters to spawn; sure there could still be a few holes in the canopy, letting a bit of light threw, but the majority would be covered. Additionally, it would be foggy. Not "Tiny Render Distance" foggy, but foggy. Mushrooms would grow on the floor as well.
So now you may be wondering why you would ever go into this part of the jungle. Well one of the possible reasons being that there could be hidden chests scattered around, carrying an assortment of items. Another possible reason being the plain thrill of it.
Mob(s):
The Giant Hornet:
Giant Hornets would be found within the Deep Jungle (assuming it gets added in).
Basically, they would be big, flying, hornets. If this were added, the first flying Overworld mob in the game. They would behave in two different ways:
Melee - When a Hornet is in melee mode, it will constantly try to bash into the player (stinging them). Additionally, there would be a "chance" that the player would become poisoned if they happen to get hit by the Hornet. Hornets in Melee mode will tend to stay close to the player.
Scouting - When a Hornet is scouting, it will completely ignore the player. Instead, it will fly randomly around the area. Scouting Hornets are completely passive, unless the player attacks them.
When a Hornet spawns, there is a 50/50 chance that it will be a Melee Hornet/Scouting Hornet. And don't worry, I'll think you'll be able to tell the difference. They would not need sunlight or darkness to spawn, however they can only spawn in Deep Jungle Biomes.
They could drop an item called "Drop of Honey" (Doesn't matter if they make/carry honey in real life), which could be used when brewing potions.
Hives: (Not a Mob, still Hornet Related)
A hives would be similar to mob spawners, except the only thing they would spawn would be Hornets. They would be found near or on the top of trees, making them hard to get rid of. They wouldn't be a common thing, but they wouldn't be rare either.
The only reason I said the chests is because people always ask "what would be the point of it?". The chests aren't a necessity.
Then in that case there should be a particular valuable resource only found in the deep jungle that would give those homebodies an incentive to go exploring. Actually I've felt the same way about all the biomes. There really isn't a good "realistic" reason to go traveling. All great explorers went out in search of exotic riches. India had spices, China had silk, Africa had Ivory and Diamonds, South America had gold, North America had abundant animals (for food and fur) and timber. In Minecraft the only difference is mostly aesthetics and you can grow/make most anything with little effort from the comfort of your bedrock grotto. We need biome specific potion ingredients/minerals/crafting materials/food types,etc. Ok, Sorry. I'm off my soapbox now. :3

Maybe in the deep jungle we could have ancient temples or something. They could be like strongholds except above ground. Maybe with chets full of ancient treasures, diamonds etc...

I was thinking this exact same thing searching through the Jungles, and the 'Deep Jungle' idea sounds awesome, but I do think that having it on the highest possible fog setting would make it a nice challenge, and as rawgt3 said, there should be a specific item or potion ingredient that could be found in the deep jungle. There should be some kind of mob that spawns in the trees or the canopy and drops down on you from above, you wouldn't be able to see them until they fall due to the high fog level.
Some people might say "Omg that would be annoying and hard to do!" but Minecraft needs an actual challenge, something that you need to prepare and organise thoroughly for before going to. Some people might say The End is hard enough as it is, but if I go in there right now with full iron armor, food, a sword and a bow, it's not actually that hard to defeat the Dragon..It doesn't take very long to prepare for either. It's also kind of a pointless dimension, just thrown in so they could add credits pretty much :\ (Don't get me wrong though, the Dragon and it's animation are amazing.)

This is a great idea as well, but I think Minecraft needs new mobs, not re-skins. *cough* Moo-shroom *cough* Cave Spider
Great idea! A temple in the ancient jungle with chests would work well. Maybe for the a new mob to make it more of a challenge we could have snakes that drop down on you.
I also think that jungles should have darker colored grass. The current grass blocks stand out.

i really like some of these ideas here making a deep jungle with MOAR new mobs in it would be really cool and i think Jeb should implement these for you
I'd like it if there was a simple fish mob with a pathfinding of swimming in groups and being attracted to fishing bobs, and in different biomes you can find ponds of them, and in the different biomes they act differently. In jungles the fishes are very fast so you have to act quick to catch them, and in deserts they are extremely rare but also a lot beter than normal fishes.
Your deep jungle idea sounds cool, but i think itd be better as its very own biome. It could spawn temples (think indianna jones) and have treasure or something. Also like the idea of a resource there

awesome. Deep jungles could be the place where all the action is, and the strongest of the strongest. Imagine a new block called poison leaf, which basically poisons a player as they walk past the block, creating a new way to kill someone without loosing items, unless that player has a bucket of milk, giving a legit good use for milk instead of only potion poison curing.

Okay, for the jungle you could make it have a special resource like say... gems, these could be turned into armour better than iron but less than diamonds. Now what about a special sword? Well let me introduce the lizard.
Lizard; a neutral mod that spawns in the jungle. It would be big and green/brownish in colour. Using a talisman you coud tame it. Then you put a saddle on and you can ride it up walls and it runs twice as fast as you. If you kill it before you tame it, it will drop a fang.
Venus Flytrap; a dangerous flower like enemy, it bite you if you get within 1 block radius of it. It drops lime dye and rarely drops some pumpkin seeds.
Fang; used to make jungle sword and talisman Gem; used to make talismans and jungle armor. Talisman; used to tame Lizards made ike this:

that would spawn in packs of 5 and carry at least 4 ocelots, and if you hit them or their ocelot they would attack you, they would be weak, but very fast.
