Right now, they're just pointless. All they do is throw snowballs that do no damage at enemies.
I was thinking to bring back the spike block that jeb_ mentioned awhile ago, and if you craft it with a enderpearl, it becomes the "Spikeball" which takes away one or two hearts away from an enemy. You can throw it yourself, but you can also give a bunch to a Snow Golem. When it runs out, it will start throwing regular snowballs again.

I'm guessing you've never made a golem sentry tower or infinite snow machine...
What if you used gravel instead this "spike" thing? Then they could throw snowballs with rocks in the middle, plus it would finally give more purpose to the stupid blocks. (Has 4 large chests full of gravel.)

This has changed now; they will die in the Nether. I understand that this may not have been implemented when you posted this, though.
